Curried Tuna and Pineapple Mornay

  • 150 grams cheeses of your choice, eg cheddar, parmesan
  • 1 large onion, peeled and 1/4rd
  • 2 cloves garlic, peeled
  • 40 grams Butter
  • 2 tablespoons plain flour
  • 2 tablespoon curry powder, or 1 tblspn curry + 1 tblspn tumeric
  • 300 grams Milk
  • 440 gram tin of pineapple pieces in juice, drained
  • 425 gram tin of tuna in springwater, drained
  • 350 grams frozen peas and corn, defrosted, or use fresh
  • Salt n pepper to taste

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Grate cheeses in TMX bowl for 5-10 seconds on Spd 9. Set aside

    2. Place onion, garlic and butter into TMX bowl and chop for 5 secs on Spd 7, scrape sides of bowl. Add curry/tumeric and saute for 3 mins on Varoma, Spd 1, with MC off.

    3. Add flour and milk. Cook for 5 mins on 80 degrees on Spd 4, MC on

    4. Add rest of ingredients, reserving some cheese to sprinkle on top. Use your spatula to mix the ingredients a little, especially if the tuna is chunky and the peas n corn are still frozen.

    5. Cook for 5 minutes at 100 degrees, Reverse, Speed 2. Cook for another 5 mins, 100 degrees, Reverse, Soft Speed.

    6. Transfer into Thermoserver and stir through pasta if desired, serve topped with reserved cheese.

Tip

Serving suggestion 2.

If you wish to serve with pasta as pictured, cook 250gm pasta FIRST, as per EDC instructions, transfer to Thermoserver with a dash of olive oil mixed through to prevent it clumping.

Suggestion 3. 

Top with the reserved cheeses and some bread crumbs and bake in the oven at 180 degrees for 15mins

Suggestion 4.

Make some shortcrust pastry FIRST, then bake this dish as a pie

Suggestion 5: It was great tonight with rice stirred through it in the ThermoServer

    I suggest a sixth tip...maybe old fashion but I still cook the pasta in boiling water on the stove... I don't really like how ends up in the Thermomix because it is often broken!

    Since I used this method I didn't add milk (and cheese) and the dish was quite good! Easy and quick!
