Risotto al Salmone

  • 1 small onion, halved
  • 150 g white wine
  • 800 g water
  • 2 Stock Cubes
  • 80 g Butter
  • 500 g arborio rice
  • 100 g smoked salmon, cut into pieces
  • 100 g cream
  • Fish Roe/Ova to garnish (optional)

Recipe's preparation

  1. Place onion into TM bowl and chop for 5 seconds on speed 7.

    Add butter and sauté for 2 minutes at 100ºC on speed 1.

    Add wine and rice then sauté for 2 minutes at 100ºC on Counter-clockwise operationReverse + speed 1.

    Add water and stock and cook for 15 minutes at 100ºC on Counter-clockwise operationReverse + speed 1.

    After 10 minutes of cooking, add the smoked salmon (leave a little for garnish) and cream.

    Garnish each portion with reserved salmon, cracked black pepper and lemon wedges.

    huge quantities - I will use at most a third of the quantities for me and hubby next time As this recipe made a lot. Flavour was good , I mixed Veges through , might try red capsicum idea next time. Thank you for the recipe [loc Glasses

    Made this tonight and the bottom half was complete mush and the top half under cooked. I really think a butterfly should be used for this recipe as it wasn't mixed enough

    Nice flavours but too gluggy for us & I backed off the rice from 500g to 480g as someone else suggested. So next time I'll drop the quantity even further (prob around 350)

    Thank you so much for posting this recipe. It was so delicious and easy to make. I added the Butterfly the second time I cooked this risotto and that seemed to cook it better. Certainly a family favourite!

    Big Smile YUMMY This risotto was awesome.  I threw in a couple of sliced mushrooms with the water, and put some baby spinach and sweetcorn kernels in the bottom of the thermoserver.  Served my family of 6.  Will definitely make again, although next time I will put slightly less rice as there wasn't much liquid left at the end and it was quite thick.
