Ingredients

  • 100 grams Parmesan cheese, block cheese, cut into 2cm squares
  • 300 grams carrots, unpeeled, cut (on an angle) into 2" pieces
  • 200 grams Bacon (trimmed of fat), cut into 2" strips
  • 50 grams red capsicum, cut into 2" strips
  • 60 grams mushrooms, unpeeled

Fresh Herbs

  • 3 stalks Oregano, leaves only
  • 6 leaves Sage
  • 1 stalk rosemary, leaves only
  • 8 sprigs parsley, broken up by hand
  • 1 red chilli, 1" pieces, with seeds (optional)

Remaining ingredients

  • 400 grams tomatoes, fresh, quartered
  • 10 grams garlic cloves, peeled, whole
  • 175 grams brown onion, peeled, halved
  • 40 grams olive oil
  • 10 grams curry powder
  • 1000 grams Beef mince (lean)
  • 15 grams Worchestershire sauce
  • 10 grams soy sauce
  • 10 grams beef stock paste, can substitute with Veg stock paste
  • 90 grams Dry Red Wine
  • 140 grams tomato paste
  • 400 grams chopped tomatoes, tinned (option to the fresh)

    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipe's preparation

  1. Grate Parmesan cheese and set aside

    1. Add blocks of parmesan cheese to the bowl. 10 sec / speed 9

    Set aside in a small container '1'.

    2. Rinse bowl with cold water

    Chop ingredients and set aside

    3. Add carrots to the bowl. 5 seconds / speed 5

    Set aside in a large container '2'.

    4. Add bacon to the bowl. 5 seconds / speed 5.

    Add to container 2.

    5. Add capsicum & mushrooms to bowl. 3 seconds / speed 5.

    Add to container 2.

    6. Add fresh herbs to bowl. 3 seconds / speed 9

    Add to container 2.

    7. Add fresh tomatoes to the bowl (if using tinned tomatoes, they will be added later)

    5 seconds / speed 5

    Add to container 2.

    Begin cooking...

    8. Add garlic and onion to the bowl. (optional chilli) 3 seconds / speed 5.

    Scrape down and repeat - 3 seconds / speed 5

    9. Add 40 g Olive oil to the bowl.

    10. Saute - 7 minutes / 100°C / speed 1 MC OFF

    11. Add curry powder. Saute - 1 minute / 100°C / speed 1 - MC OFF

    12. Add meat. 7 minutes / 100°C / REVERSE / speed 3 - MC ON (may need to pause and stir the meat with a spatula to break it up).

    13. Add butterfly to the bowl.

    14. Add worchestershire and soy sauce and stock paste concentrate.

    15. Add ingredients from the container 2, (previously set aside).

    16. Cook for 6 minutes / 100°C / REVERSE / speed 2.5 - MC ON

    17. Add red wine, tomato paste and tinned tomatoes (if you didnt add fresh)

    18. Cook for 10 minutes / 90°C / REVERSE / spoon speed - MC ON

    Serving suggestion and variants

    Serve with pasta of your choice and top with grated parmesan cheese.

    Delicious served with freshly made garlic or herb bread and a green salad.

    This dish is created for a 'fine textured finish', not a chucky meat sauce. (I suggest if you like a chunky beef sauce, omit the butterfly at step 12 and add half the meat to the shallow tray of the varoma and continue cooking with Varoma on top. After step 16, add the meat from the Varoma to the bowl. Mix through for 10-15 seconds, reverse, speed 1).

    Option at step 8, to add chilli as desired.

    I would previously have cooked this sauce for 3 hours, to achieve such a fine finish!

Tip

Sauce can be frozen.

Serve left over sauce on top of american pancakes or crepes.

Use leftover meat in toasted jaffles with cheese.
