CHICKEN BEAN & CORN ENCHILADAS WITH RICE (THERMOMUMMA)

ENCHILADAS & SAUCE

  • 200 g cheese (diced into cubes)
  • 20 g oil
  • 200 g brown onions (chopped into wedges)
  • 4 cloves of garlic
  • 400 g can of diced tomatoes
  • 1 heaped teaspoons Vegetable stock paste
  • 1 tsp sugar
  • 700 g Chicken (diced)
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • 1 tbsp cornflour
  • 4 cloves of garlic
  • 1 medium red onion (quartered)
  • 200g fresh tomatoes (quartered)
  • 1 handful of herbs (we found coriander, shallots, oregano & basil in the garden)
  • 1 can black beans (drained)
  • 1 can corn (drained)
  • 1 heaped teaspoon Vegetable stock paste
  • 14 Flour tortillas

  • 1.5 teaspoons salt

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    TO MAKE ENCHILADAS & SAUCE...
  1. To your Thermomix bowl - add cubes of cheese & grate 7 seconds/speed 7. Set cheese aside, then give your bowl a quick scrub & rinse.
  2. For those with a TM6 - head to Cookidoo & follow the 'Sauteed onions (200-300g)' recipe. For those without - add oil, onions & garlic, then cook 10 minutes/Varoma/speed 2 - at the end, chop 3 seconds/speed 4. With a spatula, scrape the sides of your bowl down.
  3. Add diced tomatoes, vegetable stock paste, & sugar. Insert simmering basket & add chopped chicken, cumin, coriander, paprika - stir chicken to coat in spices. Cook 10 minutes, Varoma, speed 2.
  4. Stir chicken to ensure it cooks evenly. Cook additional 5 minutes/Varoma/speed 2.
  5. Set chicken aside. To thicken your sauce, add cornflour, then attach splatter guard & cook for an additional 5 minutes/Varoma/speed 2.
  6. Set sauce aside. Preheat oven to 180*. Without washing your bowl, add garlic, red onion, fresh tomatoes & herbs - blitz 5 seconds/speed 5.
  7. Add steamed chicken, black beans, corn, half the reserved grated cheese & vegetable stock paste, then blitz 6 seconds/reverse/speed 4.
  8. Lay out tortillas & evenly distribute the filling.
  9. Roll up & place in 2 large baking dishes. Top with reserved enchilada sauce, & reserved cheese, then bake for 35 minutes until golden & crispy.
  10. If you have a TM6 - activate universal pre clean mode to give the bowl a clean - while you wait, you can tidy the kitchen!
  11. TO MAKE RICE...
  12. To your Thermomix bowl - add water & salt. Insert simmering basket, & weigh in rice. Take your simmering basket to the sink & rinse rice well until the water runs clear. Place simmering basket with rice back into your Thermomix bowl & cook 20 minutes/100*/speed 4.
  13. TIME TO SERVE!
  14. Enjoy! You should comfortably feed 7 people @ 2 enchiladas each, with a side of rice! tmrc_emoticons.) Or more if you have young children!
