Ingredients

Casserole

  • 500g chicken breast/thigh, cubed
  • 1 carrot, chopped to your liking
  • 1 onion, halved
  • 1 garlic clove
  • 1 spring onion, optional
  • 3 potatoes, peeled and cubed
  • 1-2 tablespoon veggie stock
  • 50g frozen peas
  • 30g oil
  • 1 1/2 capsuicum, red & green, roughly choppe
  • 1 tomato, quatered
  • 1 celery stick, optional
  • 300g water

Recipe's preparation

  1. Place onion, garlic, tomato, spring onion & capsicum in bowl and chop for 3sec, sp5

     

    Add oil and saute for 4 min, Varoma, sp1

     

    Insert butterfly and add chicken. Cook 5 min, Varoma, on speed soft

     

    Add carrot, potato, celery, veggie stock and water (you can put up to 400g water depending on how thick you like your sauce). Cook for 20-25 min (depending on how soft you like your veggies), varoma, on speed soft . 

    In the last 10 min add the peas.

     

    Once cooked let it sit in the thermoserver for 5 min before serving.

Tip

You can swap out the butterfly and use reverse instead if that is your preference.

    tasty dish, however sauce was quite runny. I added some cream in the last 10 mins and made it a creamy sauce, with a few pinches of salt and pepper.

    I've done this a couple of times now and the family love it! So quick and easy and healthy!!! 

    I don't use the butterfly, I just use reverse instead. I added 750gm chicken, 400mls water and about 1-1.tablespoons of veggie stock. I also add some corn kernels this time ( after the fact as I forgot to add the peas lol, so quickly put some peas and corn in the micro and added )

    Love this quick and easy to make meal! Hubby was after a low salt dinner and he was really happy with this casserole! I didn't have all the vegetable ingredients so only used carrot and sweet potato and 2 tomatoes from the tin. Cooked for 20mins only. Added 300gm water (but will reduce this next time) because I was worried it wasn't enough to cook the sweet potato...I was wrong...my sweet potato turned to mash which luckily thickened the sauce. Was still very delicious! I'll definitely make this again! Thank you for sharing x 

    p.s. I omitted the butterfly attachment.

    Fab recipe and flavours.  A rare hit with my fussy 3yo! I followed comments above and ditched the butterfly in favour of reverse cook. Not mushy at all. Also added extra veg with Potatoes and a dash of white wine.  Thanks. This will be added to favourites!

    Love this recipe! Great flavours, perfect for a cold winters night. I use the reverse function as my butterfly always seems to pop off, and I don't want my chicken or veg turning into mush.

    I followed the recipe step by step, however it turned into a bowl of absolute mush - so i have no idea what happened. It did lack that little bit of delicious flavour that most dishes have.
