- 500 g lamb, cubed
- 1 tablespoon olive oil
- 2 cloves garlic
- Half --- brown onion
- 500 g potatoes
- 2 carrots
- 90 g red wine
- 400 g tomato passata
- 1 tablespoon vegetable stock concentrate
- 100 g water
- 260 g Tomato chutney
- 2 sprig rosemary
- 100 g peas, fresh or frozen
- Parsley (garnish)
Add Onion and Garlic to the bowl and chop for 3 secs/Speed 7
Add Oil and Lamb. Saute 3min/Varoma/speed 1
Add all other ingredients, except peas and parsley.
Cook for 35mins/100deg/Speed 1
Add Peas then continue to cook for a further 5mins/100deg/Speed 1
Serve in bowls, garnish with Parsley
500g of Lamb will serve a family of 4 easily. Increase the quantity of Lamb to suit your needs. You will also increase the amount of passata and water slightly depending on how much sauce you like.
