Ingredients
Meatballs
- 500 g pork mince
- 3 tbsp coriander
- 2 tbsp lemongrass paste
- 2 tbsp brown sugar
- 60 g gluten free breadcrumbs
- 1 tbsp garlic infused olive oil
- 1 egg
Rice
- 200 g rice
- 1300 g water
Vegetables
- 200 g carrots
- 10 g spring onion
- 300 g bok choy
- 3 tbsp soy sauce
- 1 tbsp water
- 1 tbsp sesame oil
- 25 g ginger paste

Recipe's preparation
- Preheat oven to 170 degrees.
- Add pork mince, coriander, lemongrass, brown sugar, breadcrumbs, garlic-infused oil, egg and salt and pepper to the mixing bowl.
- Mix 10 sec//speed 3.
- Use cookie scoop to place balls of mixture into mini muffin tray (alternatively use damp hands and roll tablespoons). Cook 12 minutes turning halfway through. Keep warm in thermoserver.
- Insert simmering basket into mixing bowl and place rice into it.
- Remove simmering basket and rinse rice until water runs clear.
- Place water into the mixing bowl and insert simmering basket with rice.
- Place varoma dish into position and place carrots in the dish and bok choy in the tray. Secure varoma lid.
- Steam 14 min/Varoma/speed 2 or until rice and vegetables are cooked to your liking. Keep rice warm in thermoserver.
- Empty bowl. Add cooked vegetables, spring onion, sesame oil, ginger, soy sauce and water to the mixing bowl.
- Cook 3 min/120°C/speed 1.
- Serve rice in a bowl topped with vegetables and meatballs.
