4 portion(s)

Satay chicken all in one dinner

  • 500 grams chicken tenderloins
  • 350 grams rice, Long grain, white
  • 1000 grams water
  • 20 grams olive oil
  • 4 portions Mixed veggies of choice, I used carrot, broccoli and zucchini

Satay chicken all in one dinner

  • 3 tablespoons crunchy peanut butter
  • 2 tablespoons soy sauce
  • 3 tablespoons honey
  • 1 lemon, Juice only
  • 2 cloves garlic, Minced
  • 1.5 tablespoons curry powder

Recipe's preparation

  1. 1. Mix peanut butter, soy sauce, lemon, garlic, honey and curry powder together in shallow dish and place chicken tenderloins in dish, coat with satay sauce and leave to marinate while completing next steps.

    2. Place water and olive oil in TM bowl.

    3. Measure rice into simmering basket and rinse with water under tap, then place simmering basket into TM bowl.

    4. Cut up veggies and place in bottom varoma tray.

    5. Place a wet, scrunched piece of baking paper on top varoma tray, being careful not to cover all holes, to allow steam through to cook chicken.

    6. Place marinated chicken tenderloins on baking paper and any remaining satay sauce on top.

    7. Place varoma trays on TM bowl and cook for 20 mins/varoma/speed 4.

    8. Remove rice and check if chicken is cooked through. Cook chicken for a few more minutes on same temp above if not cooked.

    I was sceptical about this one but it worked really well and it was super easy. I added ginger, subbed brown sugar and used chicken thighs. I agree with the previous comment that it makes too much rice for us.

    WOW!!! I have been searching for a good chicken satay recipe & I was blown away when I tasted this sauce. Amazing!! So full of flavour. I followed the recommendations of others & preheated the water. For me there was way too much rice & I would like to make it without the rice. Would be interested to know how to cook it all in the bowl without the rice?

    I added boiling water more peanut butter , soy sauce, relish sauce and honey into a jug and poured over chicjen and put in thermoset very to create a more creamy sauce ...my 4 childen LOVE it....wowses!!

    The sauce is amazing! I'm cooking now and aren't too sure what to do with the baking paper? It kind of seems like not enough steam is getting through but if I was to use less paper the marinade would drop down on the veg.. Am I the only one who doesnt get it haha?

    As said in a previous comment,  I took out rice & veg (green beans, carrots) at the end of the first 20min & poured more hot water in the jug & then gave the chicken another 10min on the varoma.  I used approx 800 g chicken breast sliced.

    Best thing to come out of the thermo yet according to hubby :) Miss 2 devoured it but only used 1/2 tbsp curry powder in case it was too hot. Spot on with the 1/2 tbsp !!

    Winner winner chicken dinner. I followed the comments and pre-heated the water for a few minutes on Varoma. And I just used chicken tenderloins straight from the pack, no chopping. Perfectly done and a huge hit with Master Six and Miss Three.

    Delicious recipe! I mistakenly had the temp set to varoma in my TM 5 and the broccoli was a bit soggy and the chicken a tad dry after 20 minutes. The flavour of the satay was delicious! Adding to favourites and will make again. So easy to make!

    I made this tonight for myself and my 7 yr old and 2 yr old.  They enjoyed it and so did I.  Winner!  They can be so fussy!   It was easy & quick & yummy.  

    I used meat curry powder.  I cooked about 700g of chicken tenderloins as that was the amount in the packet I bought so I had to cook the chicken for a couple more minutes for the thicker pieces.  

    Great recipe - we'll use this one again.  Thank you!

    Absolutely delicious and easy. We used sliced chicken breasts, marinated from the day before. We like sauce so doubled the quantities, maybe next time halve the curry powder as ours was a bit hot but fabulous flavour. It is the first time I've persuaded my husband to cook rice in the Thermomix rather than by his age old method and it was successful.

    as I think i have noted before! just Yummy! but my diet rules have changed :( gluten and dairy free now

    So and Thus Used  Japanese Tamari Wheat free reduced salt Soy sauce. instead! just as yummy

    Also this time Chicken Thigh fillets cut into 1cm strips. again about adaption and useing what you have on hand.

    We had a really nice peanut butter so the satay was absolutely delicious and as most people said so easy. I did have to cook the chicken on its own an extra 5 minutes. Next time I will use sliced chicken breasts so as to have even pieces as tenderloins tend to have that very thick part in the middle. Thank you for sharing.  :love:

    This was a yummy and easy dinner. I usually have all of the ingredients handy. I found that adding the paper on the tray under the chicken made all the water drip onto the chicken and gather on top of the paper. I think better with no paper.

    OMGosh this is awesome flavour and so easy! I'm very fussy on Satay and this is great flavour! and so easy.

    I do however put my vegies on a bit later, as i like them a bit harder.
