Triple Serve Chicken Larb

  • 60 g Jasmine rice
  • 1200 g boneless skinless chicken thighs
  • 60 g peanut oil
  • 6 cm ginger
  • 3 stalks Fresh Lemongrass
  • 3 cloves garlic
  • 3 pinches salt
  • 3 pinches black pepper
  • 3 Red Chilis
  • 300 g water
  • 240 g eschalot
  • 12 sprigs coriander
  • 3 tablespoons fish sauce
  • 3 tablespoons lime juice
  • 1.5 teaspoons dried chili flakes
  • 1.5 teaspoons brown sugar
  • 12 sprigs mint

Recipe's preparation

    Cooking
  1. Place small bowl onto mixing bowl lid and weight rice into it
  2. Place a small frying pan over medium heat and toast rice for 5-10 minutes until golden brown
  3. Place toasted rice into mixing bowl and mill 1min/speed 10. Transfer into small bowl and set aside
  4. Place chicken into mixinb. owl and mince 4sec/speed 6. Transfer into bowl and set aside
  5. Place oil, ginger, lemongrss, garlic, salt, pepper and fresh chili into mixing bowl and chop 5sec/speed 6 then cook 4 min/100 degrees/speed stir
  6. Add water and reserved minced chicken and cook 4 min / 100 degrees / reverse / speed stir
  7. Scrape down sides of mixing bowl and release any chicken from blades, then cook 6 min/100 degrees/reverse/speed stir
  8. Place eschalots, spring onions, coriander, fish sauce, lime juice, chili flakes, sugar and half of mint leaves into mixing bowl, chop 5 sec/speed 6, scrape down sides with spatula
  9. Add drained chicken mixture, milled rice, and remaining mint and combine 10 sec/reverse/speed 2
