KL Hokkien Mee (Fried Yellow Noodles)

Preparations of Ingredients

  • 500 g Yellow Egg Noodles - Fresh, Washed & Drained
  • 30 g cooking oil, EVOO
  • 3 cloves garlic
  • 300 g water
  • 80 g Pork Fillets Sliced, (Marinated with a dash of soy sauce & 1/2 tsp cornflour.
  • 9 piece Prawns, raw peeled, (Marinated with a pinch of salt & pepper.)
  • 80 g Fish Cake, sliced (optional), (From the chiller in Asian shops)
  • 80 g Squid tubes (optional), 5cm x 3 cm strips
  • 1 tsp cornflour, Mix with 50g water to make cornflour solution
  • 2 tablespoon oyster sauce
  • 1 tsp light soy sauce or tamari
  • 1 tsp Thick Dark Sauce, (Thick Caramel Sauce from Asian shop)
  • 200 g chinese greens, (Choy Sum) - cut into 4cm length
  • salt and pepper, to taste

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Stir Fry Noodles
  1. 1. Wash noodles in warm water (to loosen it up), drain and set aside.

    2. Place the garlic into TM bowl. Chop 3 seconds/SP5. Scrap down side of bowl, add oil and saute for 2 mins on Varoma/SP1.

    3. Place Butterfly in place. Add hot water, pork, prawns & fish cake and dark soy, soy sauce, pepper & salt. Cook for another 2 mins on Varoma/SP1.

    4. Add in the noodles. Cook for a further 6 minutes on Varoma/SP1.

    5. Add the cornflour solution and stir in the vegetables. Mix it well with the spatula. Cook for a further 2 mins on Varoma/SP1.

    6. Serve it hot with cut chilli and soy sauce.

Tip

The ingredient list looks long but these are essential to give you an authentic KL Hokkien Noodles taste.

If you have pre-made garlic oil (garlic fried in oil and bottled for later use) , this will add flavour to the noodles as well as all other stir fry you make in your Thermomix.

Another optional ingredient is "crispy pork fat" - made by cutting the pork fat into cubes and frying them until crispy. When serving the noodles, just add 1 tbsp of crispy pork fat to noodles and serve.

If you can't find fresh Hokkien noodles from Asian grocery, use spaghetti instead. Just pre-cook them in your TM beforehand.

Based on my experience, you should get a very tasty homemade "Fried Hokkien Mee" - similar if not better than those using your wok. The noodles will look good if there is just enough sauce/gravy (but not too runny). Nonetheless, this comes with practice, or having someone show you how to make it or having tasted some of the best hawker-style KL Hokkien Mee. Enjoy..... and look forward to your comments.

    not too bad, didnt look anything like the photo though! was a bit too mushy. used all ingretients but fish cakes, was nice enough to eat, but probably wouldnt make again. dunno if maybe i did something wrong, was pale in comparison and noodles broke up fairly easily even on reverse
