Low FODMAP Chicken Pesto Pasta

  • 50 g parmesan
  • 150 g basil spinach pesto, (see my recipe)
  • 350 g water
  • 1 tbsp Vegetable stock paste, (onion and garlic free)
  • 400 g skinless chicken thigh fillets, cut into strips (approx. 5 x 2 cm)
  • 1/4 tsp ground black pepper
  • 300 g Gluten Free Pasta, (penne)
  • 75 g Fresh Baby Spinach
  • 15 g spring onion
  • 120 g cherry tomatoes
  • 100 g broccoli
  • 120 g cream, (lactose free or coconut if required)

Recipe's preparation

  1. Place parmesan in the mixing bowl. Grate 10 seconds / speed 9. Set aside.
  2. Place water, stock paste, pesto, chicken and pepper in the mixing bowl and cook 10 minutes / 100°C / reverse / speed spoon..
  3. Add pasta and cream to the mixing bowl. Stir with aid of spatula and cook 5 minutes / 100°C / reverse blades / speed spoon.
  4. Add broccoli cook 3 minutes / 100°C / reverse blades / speed spoon.
  5. Add cherry tomatoes, spring onions and baby spinach. Stir to combine with aid of spatula, then cook 2 minutes / 100°C / reverse blades / speed spoon.
  6. Garnish with parmesan before serving.
