Whatever Biscuits

Ingredients

30 piece(s)

  • 110 g raw sugar
  • 110 g Butter
  • 1 x egg
  • 160 gSelf raising flour
  • 1 x cup “whatever” (sultanas, choc chips, muesli, corn flakes, chopped peanuts, chopped dried apricots, etc)

Recipe's preparation

  1. Preheat oven to 180C.  Line baking trays with baking paper. 

    2.  Chop any “whatever” ingredients if you need too, set aside. (You can press your Turbo button a few times to do a quick chop) 

    3.  Place sugar into TM bowl and mill for 6 seconds on speed 9.  Add butter and if hard soften for 30 seconds at 60C on speed 3, then cream butter and sugar for 20 seconds on speed 4 (you may need to stop and scrape down sides of bowl and resume). 

    4.  Add egg and mix for 10 seconds on speed 4.

    5.  Add flour and mix for 20 seconds on speed 5.

    6.  Add whatever (eg: 170g choc chips) and mix for 10 seconds on Reverse + speed 4.

    7.  Roll mixture into balls the size of a walnut and place onto the prepared trays with room to spread and bake for 10-12 minutes.

Tip

These biscuits are so easy, you just place them on the trays and they spread.  Your whatever ingredients will all weigh different. 

A cup of choc chips weigh 170g.  If you are using nuts or apricots, chop these before you mill the sugar and set aside.

    Made these for the kids today and added crushed-up pretzels and chocolate chips. The mixture was too sticky to roll so dropped spoonfuls onto a tray. Big hit with the kids and would definitely make again, they've already decided what the next ones will be tmrc_emoticons.)

    Thank you, this is an excellent recipe: yummy, easy, quick and flexible. It's a keeper! I have less of a sweet tooth so cut the sugar down to 60g and did 140g dark choc bits and 20g peanut butter with a pinch of sea salt. Scrumptious.

    Loved these, very easy to make and quick - I subbed flour for gf flour, added shredded coconut, gf cornflakes and cacao - pretty close to an Afghan biscuit. Mixture was sticky, but I plopped spoonfuls on tray, flattened a little and they were perfect.

    These are really straightforward and easily adapted to own taste and dietary preferences. I dry roasted some peanuts, and used up some muesli and oats from the bottom of the cereal box. Used 2 cups of " whatever" and enjoyed them.

    We used a mix of dried apricots, dates and dark chocolate. Result was delicious. Mixture was too sticky so it was messy rolling into balls. Perhaps adding a touch more flour may prevent this.

    Love these biscuits. They are a regular I our house - using Nuttlex instead of butter to make them dairy free. Crushed Oreos and hundreds and thousands made a great treat to take to childcare for my sons birthday.

    These are sooo good - quick and easy to make and pretty tasty. I made some today when I suddenly had a spare 1/2 hour using desiccated coconut and they turned out easy to roll and spread out on the tray during baking. They won't last long!

    Super easy. I added one third of a cup of earl grey tea. Will definitely make them again, probably with spelt so that I can eat them. I use a smaller size ice cream scoop (carefully avoiding the blades of the Thermomix) rather than trying to roll the dough. I think it would be fine to double the recipe and will probably do this next time.

    Whatever biscuits - Very yummy and versatile... I reduced sugar to 90g. Also dough is very wet and sticky so instead of rolling into balls, I scooped out with a teaspoon and pressed down with a fork. They turned out lovely.. I personally wouldn't add more flour or you would get a very crumbly biscuit. I added a cup of walnuts and dates, next I will try dried apricots and white choc bits. Definitely a keeper. It didn't really take long to make and bake. Highly recommended.

    ok my changes and creation were...

    i used 3 small organic applies (2 gala and 1 granny) diced them by hand into cmall squares.

    i used a little less sugar

    i used 1/2 tropica and 1/2 self raising flour.

    i sprinkles ciminion sugar on them.

    and i baked 1/2 the bacth in small/shallow cup cake tins. OMG!!!! this is AMAZING.

    Delicious- added about 100g white choc chips, set half on the baking tray and added raisins to the other batch. Used less sugar (85g) turned out perfectly. This is a recipie to do again and again!
