  • 30 grams olive oil
  • 1 large onion peeled and quartered
  • 200 grams chopped tomatos
  • 800 gram tin of tomatos, diced
  • 1 heaped tablespoon vegetable stock
  • 10 grams balsamic vinegar
  • 1 medium potato peeled and diced
  • freshly ground white pepper to taste
  • 1/2 bunch fresh basil
  • 200 grams water

Recipe's preparation

  1.  Add onion. Chop 5 seconds at Speed 5 then add oil and cook 3 minutes/ 100°C/ Speed 1

  2. Add tomatoes. Chop 5 seconds at Speed 5. Add water, stock, balsamic vinegar, salt, pepper, and diced potato. Cook 12-15 minutes/ 100°C/ Speed 1

  3. Add fresh basil and blend 40 seconds gradually increasing to Speed 10.

    Serve with garlic bread.

    Tomato soup/pasta sauce: Yum!

    my tweaked version:




    1 clove garlic






    1 large onion peeled and quartered






    30g olive oil






    1kg chopped fresh tomatoes






    1 heaped tablespoon vegetable stock / 2/3 tsp salt






    10 grams balsamic vinegar






    no potato






    freshly ground white and black pepper






    1/2 bunch fresh basil






    no water






    1 tbsp tomato paste






    (1-2 packets sugar (those that come with tea) if making this into a pasta sauce)




    In Step 2, I cooked it for 13 minutes, added the 1 tbsp tomato paste, then a further 5 minute on varoma, MC off to thicken the soup. Even then, the resultant soup is still not creamy (as I didn’t have potatoes), but delicious nonetheless. Next time I might try cooking for 15 minutes (10 min MC on, 5 min MC off).

    I actually really enjoyed the slightly chunky texture so did not blend the soup after cooking. After adding the sugar I felt it would make the perfect pasta sauce!

    Absolutely delicious. I used all fresh tomatoes. Used a sweet potato which I put on top on the onions in the basket as it cooked just to make sure it was well cooked. Lovely flavour. Next time I will wizz it a bit more at the end as I got some seeds, but then I did use all fresh tomatoes. Thank you.

    Delicious tomato soup. I added a clove of garlic and half a red pepper with the onion. I substituted sweet potato for potato. I had to cook for 25 to 30 minutes until the sweet potato was soft before liquidising.

    Fresh, sugar free & healthy tomato soup = yum. I made this yesterday, 36c, air conditioner on & my husband insisted on a bowl then! Damn him, it was all meant for the freezer gods for winter! I cooked the potato with the onion for 10min, used only fresh tomato, homemade worceshershire instead of balsamic, added fresh coriander & basil with the tomatoes. After cooking I still added a glug more worcestershire & fresh basil at the end & blitzed again. I made a smoothie with some this morning, beautiful. Using it to make Bloody Mary's tonight with added soda water- let's see how that goes!
    This is not meant to be like a canned soup, it is thinner (thickens a little as it cools), not bright red or full of sugar because it's actually good for you. Smile

    Biancabell: No just cut into half or quarters (depending on the size) when they are cooked and you blitz the soup you don't notice any of the skin at all. Would be added roughage too I would think. Very yummy soup.

    Great recipe. I made a slight mistake and added the basil at the same time as the tomato and cooked it instead of adding at the end. It would have been fresher tasting at the end and more intense I think but the soup was delicious just the same. Thanks for a great recipe.

    Tomato soup with added vegies.I loved this soup. Tweaked it a bit.
    Used only fresh tomatoes, added leftover cooked sweet potato plus cooked carrots.
    Substituted chicken stock paste.
    Will become a regular in our household.

    Nice soup and very easy. Thanks to other posters for your comments. I also didn't add additional salt, and I used less stock paste, and it was still well and truly salty enough. I diced the potatoes quite small and cooked for 20 minutes, as I didn't want them crunchy. I only used canned diced tomatoes, as that's all I had and it was still nice.

    Omg....yummm! Also did my recipe with fresh tomato and only had 900g, omitted the salt and cooked for 20mins (as my potato wasn't soft yet) and it turned out fabulous tmrc_emoticons.) I also added some very small cooked pasta at the end to the soup, as my toddler and hubby like their soups super thick!

    Very nice healthy soup. I made it with 1kg of fresh tomatoes instead of part fresh & part tinned as have an abundance of fresh tomatoes given to us from a family members garden. I also added 2 cloves garlic at step 1 with the onion. Will defintely be making this again.

    Delicious, but found it quite salty will omit extra salt as the vege stock gives it enough salty flavour and I also added 300g thickened cream and mixed for 5 seconds speed five at the end, yummy!

    Really yummy easy soup. Great that it doesn't require many tomatoes (200g was 2 big tomatoes). I also added half a teaspoon of granulated stevia to cut through some of the zing.

    I was after an old fashioned tomato soup that didn't come out of a tin. This soup is perfect! I used 600g of fresh tomatoes and 400g of tinned. I also added some grated parmesan and a dollop of cream before serving.

    Delicious.  I also caramelized the onion and took the opportunity to steam the potato in the varoma at the same time (I did 15 mins).  Just to be sure,  I also increased the cooking time to 20 mins so that the potato was well cooked through.  Great flavour - I prefer this to the one in the Basic Cook Book.

    I made this tonight for a quick family meal. An absolute hit with all. I had grape tomatoes in the fridge so used those and grated a little parmesan on the top to serve. Everyone loved it! Even fussy 10 year old........happy meal time tonight!

    Very delicious! Loved the flavours - basil and tomatoes is a perfect combination. Potatoes didnt blend perfectly for us, had little tiny bits that had a slight crunch but did give a bit of texture. We had with a cheesy foccacia, a yummy meal! Very filling!! Thanks for sharing.
