Recipe's preparation
- Wash jars in warm soapy water. Sterilise by your chosen method.
- Wash, halve and destone apricots
- Weigh 1000gm of apricot halves into bowl. Add 250-400gm of sugar (to taste). Chop for 10 seconds on Speed 9
- Add juice of one lemon, mix for 5 seconds on Speed 5
- Cook for 40-60 mins on Varoma temp, Speed 2, with rice basket on top of the lid (no MC) or until setting point is reached.
- Pour hot jam into sterile jars, put lid on and tighten. You will hear the little button on the lid pop when it sucks in as the jam cools.

Tip
If boiling over occurs turn up the Speed to 3!
Older, squishy fruit will take longer to set than younger, greener fruit. Better to test after 40 mins than make concrete with 60mins!
I like it with less sugar than the average person so feel free to use less if that’s how you like it too.
Makes 2-3 jars
I have always sterilised my jars with boiling water. - Boil the kettle in the last 5 mins of the jam cooking. Pour boiled water into clean jars and lids, and let sit. When jam is ready, tip the boiled water out of the jars and fill them straight away with hot jam.
Store un-opened in the pantry for months. Store in the fridge once the seal is broken by opening.

Thanks Kirrilly. I have moved into a house that has an apricot tree in the garden and not wanting the ripe apricots go to waste, I searched for a Jam recipe. Making jam was easier than I expected! Thanks also to Tracyk1870 https://www.recipecommunity.com.au/user/293050 as I used your cooking time recommendation which worked well.
So I played around with this recipe as first batch...
So I played around with this recipe as first batch had burnt a little on the bottom. After 5 varying batches, reducing increasing speed and reducing time. I have come up with a solution that suits me, no burning or caramalization on the bottom. 1kg apricots - 250g sugar - juice of 1 lemon - Varoma 30min speed 2.

Apricot jam is my favourite and with cheap apricots around I jumped at the opportunity to make jam. Very nice and thick. Next time I might not chop as fine to get a chunkier jam though. Either way I will be making again.

Today I’ve been making this with 1.5 kilos of apricot halves, 500gm sugar, about 50gm lemon juice (I’m using 3 small lemons) and cooking for 45-50 minutes.
Works well and no boiling over at Speed 2 in the Tm5.

Great jam!!! Used 400g sugar and was heaps for us. I did turn temp down to 100 as I thought machine was moving a bit and spitting(even with simmering basket on) and still cooked fantastically!!!

I made 2 batches of apricot
I made 2 batches of apricot jam - first was this recipe using 350 G sugar as not a fan of sugar and apricots were sweet and ripe and found the jam was very thick and quite dark like paste However tasted good.
2nd batch was from LittleLush cooks - which had same ingredients, fruit was not chopped up at start, half the cooking time of 20 minutes and on 100 degrees. Perfect for me as still some texture of apricots, not as thick, bright in colour and an extra jar of jam was made. Tastes devine.

If you use a silicone egg
If you use a silicone egg ring and place it on lid then simmering basket on top of this gives it a bit more "breathing room" I find this method is really good and the holes in the bottom of the simmering basket don't clog up so quickly.

I've made this jam twice now and it worked perfectly both times. Easiest way to make apricot jam with apricots from the market ($2.99/kg yesterday) I have ever tried. I've found that 1 batch makes 2x 450ml jars with a bit left over to try. I'll be giving some away for Christmas. Thanks for the recipe.

I have tried a few different apricot jam recipes over the last couple of years but this one is the best by far. The fruit wasn't overly ripe but I followed the instructions and cooked the jam for 40 mins and the end result fantastic. Thank you.

Having moved to Tassie recently I am in awe of the produce that is available, I have never enjoyed fresh apricots until now! (don't get me started on the cherries and the raspberries...)
Made this jam to try and keep a little bit of summer alive for a few more months. Used 400/450gms rapadura sugar and slightly misread the recipe adding everything in together. 46mins and perfect jam. Great recipe thanks for sharing.

Love this recipe!!! I used this in my TM5 which I've only owned for 5 weeks. It's the first time I've ever made jam in my life. I used jam sugar as I had it in the pantry and thought might as well use it up (I had about 400gm and topped it up to 500gm with raw sugar). Followed the recipe exactly and cooked for 40mins. I had no idea what a 'setting point' was but thought because it stuck to the spoon it would set. Turned out perfect and so very yum. I licked the bowl after!
