Pastry
- zest l lemon
- 60 g Butter
- 15 g sugar
- 170 g SR flour, (or 170g plain flour + 1 tsp baking powder)
- 1 egg yolk
Filling
- 240 g Milk
- 230 g sugar
- 100 g lemon juice, (2 lemons)
- 2 whole eggs
- 1 egg white, (leftover from pastry)
- 15 g cornflour
Recipe's preparation
Preheat oven to 180C.
Place lemon zest and sugar into TM bowl and grate for 20s at speed 9.
Place all other pastry ingredients into TM bowl. Mix for 5s at speed 6.
Place dial on "Closed lid" , knead for 30s on "Dough mode" while pouring 3 tablespoons of water into the bowl through the lid.
Turn out onto thermomat and roll using a lightly floured rolling pin and place in a pie dish (alternatively you can just press the pastry into the pie dish).
Bake for 15 minutes at 180C or until lightly golden.
Place all ingredients into TM bowl and cook for 7 minutes at 90C on speed 4.
Pour into the pastry case and allow to cool completely before cutting.

Tip
Make a lemon passionfruit tart by adding the pulp of 2 passionfruit and reducing the milk by 40g.

I made this for the first time to take to a friends for a BBQ. Got great reviews. Very easy to make. I usually don't bother making pastry but this was so simple. I even made another base - the same as this and filled with caramel for those that don't like lemon. Next time I think I will add a little more lemon - I like a real tart lemon flavour

Wonderful!! Great recipe - I made some adjustments to suit my taste (prefer a bit tarter). I used 3 lemons, 3 whole eggs and decreased the sugar to 200 (I will reduce again next time). Gave hubby a taste as I was pouring into the tart shells.......to be asked if he could have the 'leftovers' when the pastry was filled up! So, a definite winner there.

I love, love, love this recipe! I have made it a few times now and it is just so easy and delicious! I made it again today (at my 6yo's request) as the kids ate their lunch. It's that easy. I often add the zest of the other lemon to the filling as I love lemony things. The filling has a velvety texture to it that makes it so luxurious. A real winner! Thanks Karen

The filling was very tasty (maybe a bit too eggy/jelly-like consistency for me, hoped it would be softer but perhaps I could try using less cornflour next time!). My pastry was a strange texture on the base but I think it was actually undercooked & I didn't realise it! Ha...pastry novice here...anyone got tips for how to tell if a pastry base is cooked just by looking/touching?? Thanks!!
