The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Recipe's preparation
- Place 1 kg of white sugar into mixing bowl. Set to 10 seconds and speed 6. All done. Could shorten slightly but don't go higher speed as will turn to icing sugar.

Tip
Have done 200g and 800g with same setting Android achieve the same consistency. Could reduce speed to 4-5 to start with if concerned about turning to powder. I make a batch and put in container ready for future use.
