Creamy Chicken & Brown Rice Soup

Ingredients

6 portion(s)

Soup

  • 150 grams raw brown rice
  • 50 grams raw almonds
  • 1 brown onion, peeled and quartered
  • 1 stalk celery, chopped in 4
  • 1 carrot, roughly cut
  • 30 grams EVOO or butter
  • 300 grams chicken thigh or breast, chopped in 1 inch pieces
  • 1 litre water
  • 2 tablespoons chicken stock paste
  • 1 Handful fresh parsley, chopped
  • 100 grams fresh or frozen peas

Chicken Stock Paste

  • 300 grams raw chicken thighs or breast, roughly chopped
  • 300 grams vegetables (leek/onion/shallots, carrot, garlic, celery, celeriac)
  • handful fresh herbs (rosemary, thyme, parsley)
  • 150 grams coarse sea salt or rock salt
  • 1 bay leaf
  • 50 grams white wine
  • 1 clove
  • 5 coriander seeds
  • 6

Recipe's preparation

    Chicken stock paste
  1.  Mince up raw chicken using the turbo button to pulse a few times, with the lid on the locked position.Add 300g veges and a few sprigs fresh herbs. Chop for 10 seconds on sp 5.Add salt, bay leaf, white wine, clove and coriander seeds.Cook for 20 mins, Varoma temp, speed 2, with simmering basket on top instead of MC. Replace MC and blend 1 minute, speed 10.

  2. Soup
  3. Grind 50g of the rice in Thermomix bowl for 1 minute on speed 9. Add almonds and grind 20 secs on speed 9, or until fine. Set aside.

    Place onion, garlic cloves, celery and carrot in bowl and chop for 3 seconds, speed 5. Add oil (or butter) and cook for 3 minutes, 100 degrees, speed 1.

    Add chicken and cook 3 minutes, 100 degrees, speed 1.

    Add water, stock paste, remaining 100g rice, and ground rice and almonds, and cook for 30 minutes, 100 degrees, reverse, speed 1.

    Add parsley and peas, cook another 5 minutes, 100 degrees, reverse, speed 1. Adjust seasonings if needed, and serve.

Tip

If you have a big family, or like more veges in your soup, you can add more chicken to the soup (leaving the peas out) and cook at Varoma temperature with the peas and some other veges steaming on top. Place the steamed veges in individual bowls and spoon the soup over the top. Adjust amount of chicken stock paste to taste, depending how salty you like it. You can use raw cashews instead of almonds for a creamier, smoother soup. If you can't have nuts, leave them out and just use 100g ground rice + 100g whole rice in the recipe.

    Easy, healthy and delicious! I made this tonight as I had leftover chicken and the kids and I were feeling a bit run down. It was just what we needed to feel a bit better. I made it with corn instead of peas, and used vegetable stock paste as that is what I had in the freezer. I wi definitely make this again!

    Beautiful flavour, easy to make. Need to add milk or water once cold as it's so thick (not gluggy at all) but that's no problem as everyone can have it to their favoured consistency. I used brocolli stalks & chicken mince to use up. Big hit Smile

    Thank you for this delightful recipe, it’s very tasty and a hearty dish. I used Jasmine white rice as a substitute (as I don’t like brown rice), left out the almonds still it was very nice without it, and added more chicken.

    Yummo. First time I have made this - wont be the last. Hubby thought it was beautiful. So hearty and healthy. I doubled the chicken to 600g - perfect. As suggested I also soaked my brown rice in water for a few hours beforehand. Question please - how long will that chicken stock paste last for in the fridge ? Thank you.

    I made a vegetarian version of this today (no chicken in the house). Used veggie stock paste, 2 large carrots and two green capsicum (as also no celery on hand). Increased rice to 200g and almonds to 100g. Turned out pretty good inspite it all. Bowls polished, including by fussy 2yr old.

    Wow!!! I had seriously lost all faith in thermomix soups but decided to give this a go based on reviews. Seriously so good!! I only had almond meal so used that instead of almonds and used shop bought chicken stock for convenience. Will be making this regularly for sure!! Deeeelicious 👌🙌

    GreyPlane1: just soak your brown rice for a few hours beforehand (or overnight is even better) and then rinse before adding. The rice will then cook more easily and, as extra bonus, will also be more digestible.

    This is my go to when I'm feeling sick. So delicious and super healthy. I like to add some ginger, lemon juice and sometimes basil just to lift it a bit. Hands down easy to make and so so so good.

    It took me a long time to finally getting around to making this soup but I am so glad I did. It became a Sunday night regular at my place last winter. It just tastes like goodness! I was diagnosed with T1 diabetes late last year so just use a little bit less brown rice and still sooo delicious. Thank you.

    This was so good! Definitely will be making again. I didn't have alot of vegetables on hand to make the stock so just used 1 onion and 2 carrots and then for the actual soup again used 2 carrots, onion and garlic and the peas at the end and was delicious. Will add more chicken next time. One thing I didn't do was add 2 tablespoons of the chicken stock as I cooked this prior to the soup so the residual stock was in there whilst cooking. I think if you added the 2 tablespoons it may be too salty. Will add more vegetables at the end next time like zucchini & asparagus. I also added some baby spinach to the bowl when I was eating it which was also pretty good

    This has become a staple at our house. It's a hit with grown ups and toddlers and my hubby was surprised to learn it doesn't have cream in it. I prefer to use cashews than almonds.

    It's a bit of a pain having to make the chicken stock from scratch but worth it for us as I've been making the soup weekly and the stock lasts for quite a few batches.
