This uses liquid malt extract and Dutch-processed cocoa. I tried using malted milk power and it was a failure! Malt goes beautifully with milkshakes of many flavours and was very popular as an extra in the milk bars of yesteryear. I have also listed the recipe for the spearmint syrup made in the TM. I have added a comment about cows milk varieties, and definitely the reduced fat milks produce a superior, thicker milkshake. I tried using the zero fat milk and it did get thck - too thick to suck up a straw! Crazy!\u003C\/p\u003E\u003Cp\u003EThe amount of time for whipping with the Butterfly is generally listed in the recipes \u0026nbsp;as 2 minutes, but sometimes 1 minute may be enough - you could check by getting a straw and sampling from the TM bowl before pouring into glasses!\u003C\/p\u003E\u003Cp\u003ELet me know how you go on this milkshake journey and any good new flavours. It was no longer the practice to have a container of milk (forming an icy crust on the edges), kept in the freezer with the ice cream.Ice cream (including soft serve) has become the standard means of producing a thick milk shake.\u003C\/p\u003E\u003Cp\u003EAlong with the ice cream comes unnecessary extra sweetness, kilo joules and cost of production!....and disappointment if the end result is not lovely and thick!\u003C\/p\u003E\u003Cp\u003EI have searched recipe books and blogs in my quest to make a simple thick milk shake using the Thermomix. I just couldn\u0027t seem to find one.\u0026nbsp;\u003C\/p\u003E\u003Cp\u003EThe Thermomix has a powerful motor but using frozen milk blocks didn\u0027t produce a thick milkshake. Adding ice cream only improved the result a little and I wasn\u0027t convinced!\u0026nbsp;How to get it thick and airy? Maybe speed, power and cold weren\u0027t the only factors!\u0026nbsp;I remembered that the design of commercial milk shake machines has two surprisingly small ruffled \u0026nbsp;circles towards the base of a thin shaft.\u003C\/p\u003E\u003Cp\u003EHow to fluff up the milk?\u0026nbsp;A eureka moment!\u0026nbsp;What about the butterfly!\u003C\/p\u003E\u003Cp\u003EMaybe the limitations of a slow speed (max setting 4) could be offset by the large surface area? And so it proved to be!
