For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    APPLE ALMOND BASE
  1. Grease a 22cm round loose based flat tin.
Combine flour and icing sugar in TM bowl. Add butter and combine until mixture resembles breadcrumbs.
Add egg yolk, water and vanilla essence and mix until ingredients come together.
Transfer dough to greased tin and with fingers press into the base of prepared tin. Place tin on an over tray. Cover, refrigerate for 30 minutes while you prepare filling.
  2. APPLE FILLING
Combine apples, vanilla, water and sugar in a large pan, cook, stirring occasionally for about 20 minutes or until apples are tender. Cool.

    ALMOND TOPPING

Beat butter and sugar in TM bowl until pale, beat in eggs and almond meal

Spread one third of the Almond Topping evenly over base. Top with Apple Filling, then spread remaining Almond Topping over top. Sprinkle with flaked almonds.

Cook in a moderate over 180oC for 45 minutes or until cooked when tested and golden brown on the top.

Stand for 10 minutes before cutting. Sprinkle with icing sugar and serve with ice cream or warm custard.

Yummy but not written as a Thermomix recipe. No speeds, times etc and cooking the apple in a saucepan 🙄

Absoloutely delicious. I made in a slightly larger tin, 25cm wide, worked fine. Then in a 22cm tin, and put the pastry up the sides of the tin, like a pie; otherwise the pastry would have been too thick. I also saved time by using tinned pie apple, which worked fine.
