Best Ever Date Loaf

  • 200 grams dates, Hand chop these to desired size
  • 250 grams Boiling water
  • 50 grams Butter
  • 150 grams sugar, I used white
  • 1 --- egg
  • 1 level teaspoons bicarbonate of soda
  • 250 grams Self Raising Flour, Can also use GF or whole meal

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

    Easy steps
  1. Prepare large loaf tin or 20cm round tin
    Preheat oven to 170 degrees
    Soak the dates in the boiling water (aim for at least 20 mins)
    Cream the butter and sugar 15 seconds speed 4, scrape down sides
    Add the egg and mix 10 seconds speed 4
    Add the bicarb into the date mix and stir
    Pour date mix into the creamed butter/sugar mix
    Mix 5 seconds REVERSE speed 4, scrape down sides
    Add self raising flour and mix until just mixed (peep through the MC) 20 seconds REVERSE speed 3
    Pour into prepared pan (I generously sprinkle brown sugar on the top as I love the crunch)and bake for approx 40-45mins
    Leave in pan for 5 mins if you can resist before popping onto cooking tray!

Tip

Serve when warm, fantastic with lashings of butter or reheated with a caramel sauce.
Lasts really well for a few days in an airtight container and can be toasted for work in a sandwich toaster!
i have also made the GF by switching the flour and DF by substituting Nuttolex as well.
