Apple and cinnamon muffins

  • 2 large apples, cored and quartered
  • 115 g Butter
  • 200 g brown sugar
  • 165 g Milk
  • 1 egg
  • 1 tsp apple cider vinegar
  • 300 g plain flour
  • 1 tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 2 tbsp raw sugar, for sprinkling

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Apple and cinnamon muffins
  1. Place apple quarters into bowl and chop 5 seconds/Speed 4. Set aside in a bowl.
  2. Combine butter and sugar 10 seconds/Speed 4.
  3. Add milk, egg and vinegar and mix 10 seconds/Speed 4.
  4. Add flour, bicarbonate soda, cinnamon and reserved apple and mix 10 seconds/Speed 4 or until just combined. Do not over-mix.
  5. Pour into a greased muffin tray or use muffin liners. Sprinkle with raw sugar.
  6. Bake on 200 degrees for 15-20 minutes or until dark and golden. Test with a skewer if required.
