Blueberry Muffins

Ingredients

Ingredients:

  • 90 g Butter, chopped
  • 200 g Milk
  • 1 egg
  • 100 g sugar, of choice
  • 230 g self-raising flour
  • 100 g blueberries, fresh or frozen (thaw frozen berries before use)

Recipe's preparation

    Blueberry Muffins:
  1. Preheat oven to 200 degrees celsius and grease a 12-hole muffin tin or line with muffin papers.

     

    1. Melt butter 2 min/80 deg/speed 2.

     

    2. Add the remaining ingredients to the bowl (except blueberries) and mix for 15 sec/speed 3. Scrape down bowl and mix for a further 
    5 sec/speed 3.

     

    3. Add blueberries and mix for 5 sec/Counter-clockwise operation/speed 3.

     

    4. Divide mixture evenly among the muffin tin.

     

    5. Bake for 15 minutes, until muffins are golden brown and spring back when lightly touched.

     

    6. Cool in tin for 5 minutes before turning out onto a wire rack.

    These were beautiful. I would make them again and again. I added 125g fresh blueberries and would add just a touch more next time. These muffins are so light and fluffy and not overly sweet which was perfect for my taste as I am not a great fan of eating sugar. If you haven't made these I suggest that you don't look at other recipes and use this one. Thank you Felicia81 for sharing this beautiful recipe.

    I used some left over roasted berries, some choc chips and a little Lindt Easter egg in each as I was cleaning up the fridge. They're very light, definitely a recipe to save, very versatile.

    If you use frozen berries, DO NOT THAW but toss, still frozen in a little flour. The flour keeps them from sinking to the bottom of the muffins and being still frozen keeps them from burning, where they are on the outside of the muffin.

    Love this recipe ... so easy and ssooo yummy. I only used 60g sugar and they were still sweet enough. I froze a batch and after defrosting put them in the microwave for 10-20 seconds and they were fabulous. Smile

    These taste amazing! Such a great and easy recipe. Mine don't look very pretty - they always turn out a grey-ish, light blue colour. I use frozen blurberries so I assume that's why. They do taste great though! Thanks for a fabulous recipe.

    These are great and demolished quickly! I did a double batch, but the blueberries ended up very uneven, so I'd say better to do two separate batches. Have popped half in the freezer and they're ready for school lunchboxes!

    Easy peasy! They turned out lovely and light. I didn't have any SR flour so used plain flour, 2 teaspoons baking powder and a pinch of salt. Great for freezing and putting into kids' lunchboxes.
