      Recipe is created for
      TM 5
If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add sugar to bowl and grind on sp 10 for 5 secs. Set aside.
Add almonds and mill for 6 secs, speed 9. Set aside.
    Clean and dry mixing bowl.
Insert butterfly and whisk egg whites, speed 4 until frothy (about 30 secs).

Add ground almonds, lemon zest and honey.
Mix 20 secs speed 3.5.Scrape down sides of bowl and mix again 10 secs speed 3.5.
Place icing sugar into a bowl and spoon walnut size pieces of the mixture into it. Toss around until coated and then roll roughly into a ball and place on line baking tray.
Repeat until all dough used up.
Leave to rest for 15 minutes, then bake in preheated oven, 200 C or 180 C for fan-forced, for 15-20 minutes until golden brown and cracked.
    Allow to cool on tray.

I also have made this 3 times now. I didnt remove the butterfly before adding almonds, lemon & honey the first time, and therefore the mixture didn't mix well at all. Maybe it is self-explanatory, but my subsequent attempts removing the butterfly before adding those was a lot more effective. Also, maybe my oven is grossly different, but I actually had to bake at 165 (regular, not fan forced) because 200 burnt them. Worth the while to persevere to get them right by the 3rd attempt, because they are awesome! Smile
