Creamy Cauliflower Pasta Sauce

Ingredients

4 portion(s)

Sauce

  • 370 g cauliflower florets
  • 500 g water
  • 2 tbsp TM stock
  • 150 g skim milk
  • 1 tbsp cornflour
  • 3 tbsp parmesan

Recipe's preparation

    1. Add the cauliflower, water, stock and milk to the Thermomix 90 degrees/Reverse/Speed 1 for 20 minutes.
    2. When finished the cauliflower should be soft and break apart easily. Mix speed 9 for one minute.
    3. Add the corn flour and the Parmesan and mix speed 3-4 for one minute.

    4. Add sauce to cooked pasta. I added mushroom and bacon as well but any combination of vegetable and meat would go nicely. Try chicken and asparagus!

    More like a soup than sauce.
    I made this sauce last night to use as a sauce in a creamy veg lasagne.
    I had to add extra cornflour to thicken the sauce (prefer not to). Definitely use less liquid.
    I used Oat Milk.
    A good recipe, with a little tweaking (depending on the consistency you want from the sauce)
    I made a kale and ricotta lasagne with zucchini layers and this sauce - came out delicious!
    Will make this sauce again.

    This is a wonderful basic white sauce for anything and can be easily modified 'on the fly' to be new every time.

    I reduced the water from 500 g to 200 g as I like a thicker sauce.

    Also added 2 cloves of garlic in Step 1 with the cauliflower.

    I'm going to post my final variant one of these days lol, I have it just where my wife loves it the most.

    I added 1x chick breast (250g), 2 pieces of diced shirtcut bacon - cooked on stove top and pre packaged zucchini zoodles. Quick cheats healthy meal 😀

    This was just superb! I also left out the milk. You can leave out the cheese too if you’d like to make it completely vegan tmrc_emoticons.) I would reduce the stock as 2 tablespoons made it just that little bit too salty. I finished it off with some frozen veggies and mushrooms.

    Great flavour, however was a little runny.  Will use less water next time and maybe leave the MC off whilst cooking.  Was a good alternative for carbonara sauce on pasta.  Thank you.

    I am so not a cauliflower fan! But I love this recipe, I am dairy free so used an alternative milk, I love the creaminess of this recipe and a lot healthier than using creams etc. Thank you for sharing!

    This is delish!!
    I added a chopped chicken thigh in step one
    left out the milk and just put in the water
    Cooked on 100 for 20 mins then bllitzed
    I used QJ's chicken stock paste. i put in 2Tbsp but 1.5 would've been adequate.
    Used cheddar cheese instead of parmesan.
    Made into a pasta bake, adding peas, corn, carrot and capsicum
