Peanut Butter Crinkles

Ingredients

25 piece(s)

Biscuit dough

  • 1/2 Lemon, Rind only
  • 130 grams Butter
  • 1/2 teaspoon vanilla essence
  • 75 grams caster sugar
  • 50 grams Dark Brown Sugar
  • 75 grams peanut butter, smooth
  • 200 grams plain flour
  • 1 teaspoon bicarb soda

Recipe's preparation

  1. Preheat oven to 180 degrees.

    Line baking trays with baking paper.

    Place lemon rind in jug, speed 9, 10 secs

  2. Add butter, vanilla, sugars, and peanut butter, speed 4, 20 secs. Scrape down sides of jug.

  3. Add flour and bicarb soda and mix, speed 4, 10 secs

  4. Roll heaped teaspoonfuls into small balls and place on a lined baking tray.

  5. Press biscuits down with a fork, first crossways and then lengthways to create a crinkle effect.

  6. Bake in oven for 15 minutes and allow to cool before removing from baking trays.

    Hi all, I added a egg after beating sugar and butter and then heated for a further 10secs on speed 4... Made them lighter and fluffier. But definitely a hit! Thx tmrc_emoticons.)

    My mum used to make this exact recipe for us as little ones (of course pre-thermomix!)  tmrc_emoticons.;) and i have just made a batch of these, they are delicious!!

    The rind was still a bit chunky so ground it a bit more.

    Can't wait for my kids to get home from school to start creating the same memories I have of these growing up. Thanks for the awesome conversion.  Love
