Biscuit dough
- 1/2 Lemon, Rind only
- 130 grams Butter
- 1/2 teaspoon vanilla essence
- 75 grams caster sugar
- 50 grams Dark Brown Sugar
- 75 grams peanut butter, smooth
- 200 grams plain flour
- 1 teaspoon bicarb soda

Recipe's preparation
Preheat oven to 180 degrees.
Line baking trays with baking paper.
Place lemon rind in jug, speed 9, 10 secs
Add butter, vanilla, sugars, and peanut butter, speed 4, 20 secs. Scrape down sides of jug.
Add flour and bicarb soda and mix, speed 4, 10 secs
Roll heaped teaspoonfuls into small balls and place on a lined baking tray.
Press biscuits down with a fork, first crossways and then lengthways to create a crinkle effect.
Bake in oven for 15 minutes and allow to cool before removing from baking trays.

The rind was still a bit chunky so ground it a bit more.
