  • 20 grams Toasted shredded coconut
  • 265 grams self raising flour
  • 200 grams brown sugar
  • 45 grams Desiccated Coconut
  • 1 level teaspoon bicarbonate soda
  • 1 teaspoon cinnamon
  • 440 grams Can crushed pineapple
  • 3 Bananas (small), Mashed
  • 185 grams extra light olive oil
  • 2 eggs
  • 150 grams cream cheese, Room temp
  • 50 grams unsalted butter cubed, Room temp
  • 225 grams TM icing sugar
  • 25 grams Milk

Recipe's preparation

    Hummingbird cake with cream cheese frosting
  1. Preheat oven to 160 deg C. Brush a round 22cm cake tin with olive oil then line base with non-stick baking paper.

     Add flour, sugar, desiccated coconut, bicarbonate of soda and cinnamon to TM bowl and mix  speed 5/ 5 secs.

    Add pineapple, banana, olive oil and eggs. Mix speed 5/ 15 sec.

    Pour into prepared cake tin and bake in oven for 1 hour 25mins or until a skewer inserted into centre comes out clean. Set aside for 10 mins to cool before turning onto wire rack.

    Cream Cheese Frosting

    Add cream cheese and butter to TM bowl. Set on speed 4 / 10 secs. Add icing sugar and milk, set on speed 5 /10 secs.

    Spread cream frosting over top of cake. Sprinkle with toasted flaked coconut and serve

    Really yummy cake, I made with gluten free flour and you wouldn't know the difference. I also cut down on the olive oil to 150mls. Very moist cake. My kids loved it. Thanks for posting.

    I added Inca Berries and reduced the amount of oil to 140g.  I divided up the mixture into 2 loaf tins and the family have smashed through both.  Thanks for posting this recipe!

    made this for my mums birthday today and it was a hit! Very dense and moist. Only used 100g of oil and took it out 20 mins early As it was starting to caramelise on the outside. Will definately make this again!!!

    Ok, so I made the cake and you DO NOT drain the juice from the pineapple ... it all goes in. 

    The cake turns out DELICIOUS!

    I've never made Hummingbird before - its in the oven now......but I did wonder weather I was supposed to drain the pineapple??   I poured a little juice off otherwise it all went in.  Is that right?
