      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. 1. Place the Almonds in the bowl. Mill: 1min Speed 9

    2. Reduce the Speed to 6. Process: 2min Check that a paste is forming and process further in 30sec increments until the desired consistency is reached.

    3. Store in a jar in the fridge.

Tip

Almonds have a lower oil content than other nuts, hence the longer processing time that is needed to turn them into a smooth paste.

You may notice that the machine starts to measure an increasing temperature in the bowl. This is simply caused by the friction created as you process the nuts. This slight warming of the bowl will actually help you achieve a smooth paste.

    I soak the almonds first to activate them them dry them in the dehydrator, so the process takes a little longer. I also add a splash of coconut oil during the final blitz and voila - pure goodness in a jar!

    Great recipe, lovely final product, but sheesh, now I know why this stuff costs so much at the shops! I am used to making peanut butter, which is basically a 2:30 wham-bam-thank you-ma'am type job... This takes longer, with a lot more scraping down required. BUT worth it. Thanks for the recipe.

    I don't think it would matter how much was in the bowl you would still need to scrape the sides as the sticky nature of the nut butter just makes it stick to the walls. I don't doubt the quantity could be doubled, the Thermomix would certainly be up for the job. But I suspect it would take longer!

    Tried this today. Has anyone tried doubling the amount? I was wondering if this would make it easier to blend? There was a lot of scraping down the sides and repeat on 30 seconds.
