Chewy Chocolate Brownies

Ingredients

40 slice(s)

  • 125 g Butter, roughly chopped
  • 350 g brown sugar
  • 45 g cocoa powder
  • ½ teaspoon vanilla essence
  • 2 eggs
  • 155 g SR flour
  • 100-200 g white/dark/milk chocolate melts, whatever combination you prefer, roughly chopped in large pieces

Recipe's preparation

  1. Add butter into bowl and melt for 2 mins/70°C/speed 2½.

  2. Add brown sugar and combine for 10 secs/speed 4. Scrape down sides and mix for a further 5 secs/speed 3.

  3. Add cocoa, vanilla essence, eggs and SR flour, and mix for 35 secs/speed 4. Scrape down sides.

  4. Add chopped chocolate melts and stir through for 30 secs/Counter-clockwise operation/speed 2.

  5. Pour mixture into greased or paper lined lamington or large slice tin. Cook at 170°C for 25-30 mins.

Tip

This recipe is great for using up those leftover melts that won't melt down properly for other recipes.

 

Variations:

You can substitute or add nuts instead of or as well as choc melts eg. pecans or walnuts.

You can also add finely ground instant coffee for a different flavour.

    Such a Good Easy Recipe

    My family is fussy when it comes to Brownies so I haven't been game enough to try a Thermomix recipe until today.
    We are on holidays (Thermie comes with us when we drive to our holiday destination) so only have minimal choice of ingredients so this recipe was great.
    I cut 100gm sugar out and cooked it for the suggested time and the Brownie turned out perfect - crunchy on the outside & chewy and gooey in the middle. 👌🏼

    Brownies are usually done where they are set and crunchy around the edge and just set in the middle (I like it when a skewer inserted in the middle comes out clean just like testing a cake).
    I did this today when I made these brownies. When I cut the slices, I had crunchy ones (from around the four edges), chewy ones (from inside the edges) and gooey ones from the very middle....everyone in the family was happy! 😅

    Pregnancy cravings for brownie had me asking my hubbie to go by some...then i remembered i own a thermomix Big Smile! Googled up this recipe and they were so quick and easy to make. Also they are VERY delicious (certainly nicer than a packet mix which i first considered!) I just chucked in whatever cooking chocolate i had leftover floating in the bottom of the container (white choc bits, milk melts and block chopped) May have overcooked slightly but still chewy and fudgey tasting. Thanks for a great recipe Cooking 7

    Made these dairy free. Replaced butter with rice bran oil and skipped first step. Definitely would reduce the sugar, and used Whitaker’s dark almond instead of choc melts. Delicious. Next time it won’t be as sweet. 😉

    Made them exactly the same as the recipe, because hey, if you're making brownies, they're not meant to have reduced sugar tmrc_emoticons.;)
    They were a huge hit at Playgroup - one lady ate 8 pieces, one said they should be illegal, my husband ate our entire stash as a midnight snack.

    Omg, these were so yummy and quick to make!!! As others have stated I reduced the sugar to 200g, and added 60g chocolate chips and 60g white chocolate chips. They turned out great after 28 mins in the oven. Serve by itself is great, or with ice cream or even cream for a more naughtier treat! Will definitely be making it again.

    Made these 2 days ago, making a second batch today. Read the previous comments and decreased sugar to 150g and that was enough for us.

    Just used the Cadbury milk chocolate melts, I was lazy and didn't cut them, as far as I could tell it didn't make any noticeable difference.
