Little orange tea cakes

Ingredients

Cakes

  • 125 g unsalted butter
  • 1 orange, rind (grated) and juice
  • 2 eggs
  • 160 g caster sugar
  • 225 g self raising flour

Icing

  • icing sugar
  • Butter
  • orange juice, or orange liquor

Recipe's preparation

  1. Place butter in TM bowl 2mins at 60deg on sp 4.

    Add grated rind and juice from the orange, eggs, sugar and flour.

    Mix together 30sec at sp 5. Then spoon in to patty pan cases.

    Bake at 190 deg for approx 13-15 mins (until golden and spring back).

     

  2. To ice them I mix icing sugar, butter and orange juice (or Cointreau) until it reaches the right consistency.

    Spread the icing on top and try not to eat them in one sitting!
