Vegetable & Feta Tart

Ingredients

Tart

  • 400 g Pumpkln, cut into 4cm cubes
  • 100 g Zuchini, cut into 4cm cubes
  • 30 g olive oil
  • 1/2 teaspoon sea salt, plus extra to sprinkle onto pumpkin & zucchini
  • 2 Red onions, large, sliced into rings
  • handful of English spinach leaves
  • 2 tablespoon sugar
  • 1 qty short crust pastry (from everyday cookbook)
  • 100 g danish feta
  • 100 g full fat milk
  • 100g Pouring Cream
  • 2 eggs

Recipe's preparation

  1. 1. Pre-heat oven to 180C. Grease a 23cm pie tin.
    2. Place pumpkin and zucchini in a roasting pan and drizzle with half of the oil and sprinkle with salt. Bake for 20 – 30mins or until soft. Zucchini may need less time to cook.
    3. Place onions, sugar and remaining oil to TM bowl and sauté for 28mins Varoma Reverse Speed 2. In the last 2mins add spinach through the hole of the lid whilst cooking so it becomes wilted. Set aside.
    4. Line prepared tin with pastry and blind bake till golden brown. Spread caramelised onion and spinach over cooked pastry, crumble over feta and top with reserved pumpkin and zucchini.
    5. Place milk, cream, eggs and salt to a clean TM bowl and mix for 10sec Speed 3.
    6. Carefully pour over vegetable and feta base and bake for 40-50mins or until just set.

    Really tasty. I used brown onions as I didnt have any red and halved the sugar. Left out the pastry and used sour cream instead of the milk and used four eggs instead of two. Delicious!

    Absolutely delicious! Followed the recipe exactly - perfect caramelised onions with the specified amount of sugar, sautéed for the full 28 mins and it came out like jam (yum). Blind baking the pastry took about 20 min, last 5 min with the baking weights off. Agree there are lots of steps, but if you have the time then we’ll worth making this!

    Fabulous recipe! I've made it several times now. I like to make a double batch because they are somewhat time consuming. I usually make individual tarts, which are easy to pop into lunch boxes too.

    I loved this, needed some tweaking to suit us, but easy to do and really Yummy. I did only 1/2 tsp of sugar and omitted the pastry. I also substituted butter it for pumpkin.i also added Parmesan cheese I needed to use on top. Overall thumbs up!!

    very delicious vegetable tart, enjoyed by my 2 & 3.5 year olds. I only used 1 teaspoon of raw sugar & 200g of cream, no milk. The onions were just yummy.  tmrc_emoticons.)

    YUMMY!  I thought I had zucchinis but didn't so I used eggplant.  It was so yummy and I think you could add whatever vegetables you wanted.  The flavours were amazing and my pastry was perfect.  First time I have ever attempted anything like this and I am suitably impressed with myself.  Good, easy recipe to follow.

  • Yum! quartered 3 large Roma

    Yum! quartered 3 large Roma tomatoes and roasted them with the pumpkin, zucchini and also some sweet potato. Might reduce sugar in onions to just 1 level tbsp next time. I used Trim milk and light cream so it took close to an hour to cook (but it could have been my dodgy oven!) and kept top covered with alfoil as I had already browned the veggies and pastry and was worried I might burn them. Can't wait to make again. It is perfect for impressing visitors! Thank you for sharing.

    OMG !!! .... this was AY-MAY-ZING !!!! .... the flavours were melt in your mouth delicious !!! .... the only thing I found was that the base of the pastry was quite soggy after being cooked through but maybe I was being too cautious not to over cook it when I blind baked it .... did anyone else find that ?  .... everyone who has tasted it has LOVED it !!! .... will defs be making again and again and again

    Excellent tasty recipe. Since discovering this recipe I have made it about 5 times. Made them into large tarts and also small individual ones as well. Works well with both sizes. This recipe saved my vegetarian daughter from boring steamed vegetables for dinner. Only thing I changed was I add the onions in with the vegetables and roast all together. Have also added cherry tomatos to the vegetable mix and roasted as well.  Very nice.  Thanks for the recipe.

    This was delicious! 28 mins to caramelise onions was perfect. I actually used Greek yoghurt instead of cream (only because I realised I didn't have any at last minute) and used normal feta. Definitely make again. Yum tmrc_emoticons.)

     I tried this last night and it was delicious.  I think the direction to cook the onions for 28 minutes is correct as this helps them to caramelise and achieve the right jam like consistency that melds beautifully with the Feta.  I did cut the vegetables a lot smaller than the recommended 4cm and added more roasted vegies.  I agree that less sugar can be used and it still tastes delicious tmrc_emoticons.-)

    So I made this tonight, ended up sauteing the onions for 8 minutes at a guess - seemed to be long enough to soften.In terms of veg we used mushrooms, cherry tomatoes, green capsicum, roasted carrots and also the onion/spinach mix and the feta. I also mixed fresh thyme through the cream and egg mixture. It was really tasty - next time I will halve or quarter the sugar I think, the onions were quite sweet.

     

    One to go on our regular dinner rotation!
