Ingredients

8 litre(s)

Brewed Ginger Beer (alcoholic)

  • 2 tsp dried yeast
  • 9 tbsp fresh ginger root
  • 9 tbsp sugar
  • 6.7 litres water
  • 1000 gram sugar
  • 125 grams freshly squeezed lemon juice

Recipe's preparation

    Starter plant if needed
  1. In a jar put 1T of sugar 2t of yeast 1T of grated ginger and 1cup warm water
    Stir untill sugar disolves and cover top of jar with a cloth
    This is a starter plant if you don't get given one
  2. To feed the plant
  3. For 8 days feed the plant
    1T of grated ginger
    1T of sugar
  4. To make up Ginger Beer
  5. On the 9th day strain the liquid from the plant thru a fine cloth
    Save both the liquid and the pulp
    Closed lid put 1000gm of sugar and 1000gm of water ....10 minutes 100°C speed 3

    In a large container ( I use my stock pot) put an extra 5700gm of water, strained liquid of plant and lemon juice stir

    When cooled add sugar syrup stir again

    Pour into washed soft drink bottles leaving a 5cm gap at the top, squeeze bottle untill liquid reaches the top and screw lid on tightly
  6. Store the bottles in a quiet place for 2-3 weeks untill firm

    Chill before drinking

    Open Carefully and enjoy
  7. New plant
  8. Divide the pulp into 2 and place into 2 clean jars with 1C water
    No counter-clockwise operation
    Give a plant away with link to this recipie

    Continue to feed as above for 9 days and repeat

Tip

I grate 200gm of fresh ginger root Closed lid 10 seconds speed 5

I store in clip lock bags in the freezer and snap a bit off each day to feed the plant

Also this will become alcoholic over time so drink in moderation

    Just a note, I'm on day 7 of feeding my ginger bug and just realised I added too much yeast as the recipe states 2 different quantities in ingredients & method - ingredients says TSP, method says tbsp. You might want to amend...I'm not too bothered as enjoying the process ...just hope it works ...if it's more alcoholic that's great too 😄

    Hi! I'm in the process of making this. Thanks for sharing. Any other pointers I should be aware of? What sort of percentage do you think it has after 2-3 weeks? Also how long can you use the same 'starter'? Do you advise re-starting the ginger bug from scratch at some point. Thanks again for posting this.
