Easy Raspberry & Coconut Slice

Ingredients

0 portion(s)

BASE

  • 140 g Butter
  • 120 g raw sugar
  • 80 g Coconut
  • 200 g plain flour

TOPPING

  • 120 g Coconut
  • 100 g raw sugar
  • 1 egg

FILLING

  • Good Quality Raspberry Jam

Recipe's preparation

    BASE
  1. Preheat oven to 180 degrees


    Add butter and sugar to TM - mix 5 Secs Speed 5


    Add in coconut and flour and mix a further


    Mix Speed 8 for 20 secs


     

  2. Pat mixture into Slice Tin and flatten down with fingers

  3. Bake for 15 mins til golden

  4. Allow to cool slightly and cover base generously with good quality Raspberry Jam

  5. TOPPING
  6. Add to TM coconut, egg & sugar

  7. Mix for 10 secs Speed 5


    Sprinkle over jam layer

  8. Bake for a further 10-15 mins til golden on top

    I made my own jam as seen in a lot of comments, 250gm punnet strawbs made perfect amount for the slice.
    I made the base, then the jam while in the oven, then the top. And I didn't wash the bowl in between. Easy, impressive. And. Oh. So. Good.

    This is a great version of an old fashioned slice. Very sweet, but I think it probably varies depending on the jam used. I might try it with roasted berries. Re the grittiness, it's ok, but perhaps raw caster sugar for the topping. Easy enough to play around without wasting a bake.
    Will defnitely go in the repertoir.

    I made this with gluten free flour and lactose free margarine and it tasted great. After reading a few of the comments aboutt being sweet I reduced the sugar by about a third.  Very nice quick and easy. Will be making this again.

    Super easy and delicious slice.  I made mine with "Bush Lime" Butter recipe (from the chip) ... subsituted the bush limes for lemons.  It was tangy and wonderful.  A real hit with everyone.

    Old but a goody!  Only had a ordinary jam but added some frozen raspberries to the jam.. About 1/2 cup. Very nice slice.  Oh ..I also left the coconut out of the base, but added egg yolk, using two whites with sugar and coconut for the top which is closer to my old recipe.
