Creamy Vanilla Frosting

  • 35 g plain flour
  • 200 g whole milk
  • 150 g sugar
  • 200 g unsalted butter
  • 35 gnatural vanilla extract

Recipe's preparation

  1. Place
    flour and milk into TM bowl and pulse 2-3
    times
    to blend. Cook for 15 minutes
    at 80°C on speed 4. Pour into bowl, cover with plastic wrap, pushing plastic
    down onto surface of mixture. Cool completely. In clean TM bowl pulverise sugar
    for 15 seconds on speed 9. Add butter and chop for 5-10 seconds on speed 7. Insert Butterfly
    and aerate butter and sugar for 1-2
    minutes
    on speed 3. Scrape down
    sides of bowl as necessary. Add vanilla and beat well. Add cooked milk mixture
    and continue to beat for around 2-3
    minutes
    on speed 3 until very
    smooth and white. Cover and refrigerate for 15 minutes. (No longer and no
    less.) Use immediately.

    Hi Kimkid

    There is a chance that if you freeze this frosting it will leach when it defrosts so could make the cake a bit soggy.
    If you were wanting to fill it and freeze it you would be better off filling it with cream, this would freeze better, it won't look as 'fresh' as if you had done it on the day but is posssibly a better option.

    You may of already made this - but I made it yesterday and had some leftover in the fridge so I've just tried it. It has set very hard so would need to be left out to get to room temperature, and possibly re-whipped in the thermomix. I made the flour/milk mix the night before, and the rest on the morning of the party. The definitely saved time and the icing was lovely and smooth. Hope that helps!

    This icing is gorgeous! I've had some fails with buttercream icing and was looking for something that tasted less buttery/sugary/didn't go gritty tmrc_emoticons.) It is definitely worth the extra effort.

    I made the flour/milk mixture the night before and popped it in the fridge. In the morning I got up and left it on the bench for about 2 hours to get to room temperature, then made the recipe. I also added a capful of strawberry essence to the mix, along with about 20-25g of vanilla. That tip was given to me by another lady who had made the recipe and it was perfect! This will be my go to icing from now on!
