Just a variation of the recipe in the ECB with less sugar!
Place all the ingredients in the TM bowl and cook 8 min/80 degrees/ speed 3
If at setting point, the mixture should coat the back of a spoon with a thick layer. If butter is not set cook for a further 2-3 minutes. Pour into a jar and refrigerate
Tastes great just on toast, on a banana muffin or with chicken

I have made this about 8 times now. The first 3 were beautiful. This weekend I have had 5 attempts and every one has failed. I cook longer and still fails. It's runny and frothy and doesn't thicken. Any ideas what I could be doing wrong. I've used farm fresh and store bought eggs and it has made no difference. Help!

For anyone interested, I tried half lemon juice half orange juice and it was very nice.
I also did 6x the recipe and cooked it for 35 minutes.

Made this on the weekend - triple the recipe, made 3 jars of very lovely lemon butter.... it's all gone now though - the kids loved it! Will have to make some more this weekend. Thank you so much for sharing your recipe.

Really delicious & perfect sweetness. My only query is that the recipe didn't say to put the butterfly in first - I did as per the Everyday cookbook recipe.

Just made and tripled recipe and cooked for 10 minutes. Came out perfectly and just finished licking out thr bowl, lid etc. Can't wait to have some on fresh bread or scones. Maybe even on hot cross buns. Smells divine!!!
