Recipe's preparation
Soak apricots in cold water for about 2 hours. This makes them nice and soft (Thank you to my friend Michelle for that tip!).
Drain off all water, rinse and pop into bowl.
Add coconut and honey.
Blitz slowly up to speed 7 for approximately 30 secs.
You want a nice dough to form and be able to roll a ball in your hands. Blitz a little longer if the dough is dry.
Roll into small bite size balls and roll in coconut.
I keep mine in a jar in the fridge.

So easy and tasty, thank you . I didn't add honey, and the mixture was a fine consistency for rolling. Child 8 thought they tasted "too apricoty", so perhaps next time I might try adjusting quantities or trying the almonds as per the suggestion above.

These are great. I only use
These are great. I only use 150g of coconut though as they tend to stick together better.
I am not sure what I did
I am not sure what I did wrong but I needed to mix for about 90 seconds; even then my mixture was crumbly, so I drizzled some maple syrup to help form the ball. Finished product was yummy though.

I halved the amount of
I halved the amount of coconut that went in and substituted it with almonds. I milled 100g Almonds 10secs/Sp10. Then went on to add the other ingredients. Yummo!
