Ingredients

Wilton’s Buttercream Icing

  • 250 g Copha, If you can get hold of Crisco, this can be used
  • 250 g unsalted butter, vegan margarine can be used instead
  • 1 tsp clear vanilla extract, If not after a pure white icing, use a vanilla bean
  • 1000 g icing sugar, No need to sift for use in TMX :)
  • 2 tbsp Milk, vegan milk can be used instead

Recipe's preparation

    Wilton’s Buttercream Icing
  1. I thought I'd include this recipe as it's an amazing icing recipe and perfect for the Thermomix as it makes light work of Copha! I do recommend having the Copha at room temperature however, and to initially cut the block up into small pieces.

    Places pieces of Copha into TMX bowl and chop on Speed 5/6 for 10 seconds or so. Add butter (also cut up into cubes) and combine together with Copha on Speed 5/6 for a few seconds until smooth. Add vanilla and the sugar a cup at a time, and use Speed 3/4 depending on how well the sugar gets integrated. The Thermomix works best when there is some liquid to assist with the movement of the ingredients so add a tablespoon of milk now. Keep combining remaining cups of sugar at various speeds until fully combined and smooth. Add remaining milk and colouring if using. For anyone wondering, even Wilton's strongest colours won't stain the TMX bowl tmrc_emoticons.)

    For best results, keep icing in the TMX bowl in refrigerator until ready to use. You can whip it up on Speed 4 for a few seconds to make it spreadable/pipable. Remaining icing can be refrigerated in an airtight container, and stored for 2 weeks. Rewhip before using.

    I followed previous suggestions about halving the icing sugar to 500g and it worked perfectly. I had my copha at room temperature (24C) so it whipped up easily. You do need to get in there with the spatula from time to time to help get everything mixing, but I find that’s pretty standard for the thermi. The icing overall is quite sweet and not as buttery tasting as I would have liked, but it does hold up really well in hot weather.

    Found this recipe on the gastronomy blog and it says 4 cups of icing sugar, which works out a little over 500grams, as opposed to the 1000grams. So I measured in the cups instead and it turned out perfect. In the past I had tried this recipe with the 1000grams and it was far too thick and gritty. I am guessing this is a typo?

    Have just made this buttercream and the texture is amazing. I found that I needed to mix the copha on speed 3 otherwise it would only mix the bottom. Once i added the butter (speed 3) it combined really well and mixed through not creating a well like it would on a faster speed.

    I used 600g icing sugar and its a lovely flavour. I intitally used 500g but still had a slight oily taste from the copha, the extra cup of icing sugar fixed this.

    Cannot wait to pipe with it tomorrow! Thanks for the great recipe!

    1. Reading the comments half should be enough, is that using 250g or 500g sugar???
    2. Can this be left out overnight or 24hrs or does it need to be refrigerated?

    Not good for me I followed instructions and ended up changing it over to the Kitchen aid as the TM was struggling with this and only mixxing what was down the bottom of the jug. I had to add other milk. It was extramly tick and hard to work with. So many rave about this and for me I would not make again

    Not sure what I did wrong. I left the Copha out overnight. Chopped into small cubes. Still had great trouble getting it to mix. Once I had added the room temperature (18 degrees in the house) unsalted butter, still stiff. Added at least 4 tblsp of milk and it would not pipe. In the end I scraped it on to the small cakes, that I had wanted to look beautiful for my daughter's birthday.
    I thought the taste was OK, but my husband said it tasted greasy. So all in all a disappointment.

    Love this recipe!! I went searching for a good buttercream icing for my daughter's wedding cake, thank you so much for putting it on community. I particularly love the subtle sweet taste which doesn't overpower the cake and having the copha and butter mix it should hold its shape out of the fridge. After reading some comments I too only used half of the icing sugar and it is perfect, hope the guests at the wedding like it too 😉

    I made this recipe twice ( a very huge cake) the first time the copha constantly stuck to the bowl (left it out overnight, but I live in a cold climate) so with the second batch I mixed the copha and butter cubed alternatively and it worked a treat. Nice and smooth and slot easier to work with. I too only ended up using  500 gms of sugar. Family noticed a much nicer taste compared to my 'usual' buttercream icing. My new go to icing

    I also left my copha out overnight and it was nice and soft to work with. I had trouble with it combining too and had to keep stopping the machine, scraping it and mixing it together but the end result was fantastic! Best icing I've ever worked with. For once in my life, my piping actually looks decent! I only used 500g icing sugar as previous comments suggested and it was absolutely sweet enough with the lesser amount.     Great Recipe. I left my copha out overnight as I was making the icing first thing in the morning, it was lovely and soft and easy to work with. Once in the thermomix it did require a bit of extra mixing time, as it stuck around the edges of the bowl. Extra mixing of the butter makes all the difference if you want a really white icing. I beat the butter and copha for about 2 minutes (on and off, checking it and scraping back off the bowl) my butter turned from yellowish colour to a light creamy white colour.  Once I added the icing sugar I had a lovely shade of white icing that worked beautifully with my Neapolitan cake.  Highly recommend this icing as it tastes and looks beautiful.

    i am also still confused, if I am using 125g of Copa and butter is that 500g of icing sugar or 250? Most recipes I've seen is a 2:1 ratio of sugar to butter so perhaps the recipe is correct?

    Tastes great and pipes really well. It makes a HUGE amount so have now put some in the freezer. Thermy also had a bit of trouble mixing - kept getting bubbles under the blades so I had to keep stopping to stir.

    This was a disaster for me. I reckon you may need to half the ingredients. My thermo could not handle all of the copha and butter and then when I added the icing sugar it was struggling so much to spin the ingredients around it was all thick and getting stuck and wouldn't move, just kept spinning the blade but the ingredients were just sitting there stuck!

    This recipe was exactly what I was after for my daughters cupcakes.  The icing needed to be super thick and fluffy and stay that way as a fridge was not going to be always available.  After icing, I froze the cupcakes over night.  The next morning, they looked fantastic and thawed without any damage to the icing or decorations.  Thank you a million times for the fantastic recipe!!

    This was a total winner despite me being sceptical of using the copha and the heat the cake was going to endure! I spilt it into separate containers, added colour and put it into the fridge for a few days. Took it out a few hours before icing and it was perfect for use in spatula and piping applications!
