Ginger-Shallot Oil

      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

  1. Separate the white and green parts of the spring onions/shallots.
    Thinly slice the green parts then set aside.
    Add the ginger and the white parts of the spring onions to the bowl.
    Insert the measuring cup and chop for 10 seconds on Speed 5.
    Scrape down the sides of the bowl.
    Add the soy sauce, salt and oil.
    Insert the measuring cup and heat on 110 degrees for 5 minutes on Speed 1.
    Allow to cool for 15 minutes.
    Add the sliced green onion and stir gently with the spatula to combine.
    Carefully pour into a jar (using the lid of the machine as a funnel), then seal and store in the fridge for a month.

    Best served at room temperature.


Any neutral oil can be used.
Use spring onions/shallots, not the French eschalots.
Soy sauce can be replaced with gluten-free Tamari.

The method for this recipe has been adapted, with love, from To Asia, With Love by Hetty McKinnon, who recommends it as a salad dressing, drizzled over roast veggies, poured over noodles or rice, or used as a dipping sauce for shallot pancakes or dumplings.
