Tomato Paste (concentrate)

Ingredients

26 portion(s)

  • 1500 g tomatoes, Quartered
  • 20 g macadamia oil, Or oil of your choice
  • 20 g Himalayan salt
  • 20 g Coconut sugar, Or sugar of your choice
  • 2 bay leaves
  • small handful of parsley, See photo for amount

Recipe's preparation

  1. Place all ingredients into your TMX bowl and process for 10 seconds on speed 8.

  2. Cook for 45 minutes, Varoma temp, speed 1, with the basket on top of the lid instead of the MC.

  3. Scrape down the sides and lid and blitz for 1 minute, speed 9.

  4. Cook for a further 15 minutes, Varoma temp, speed 1.

  5. Scoop tablespoonfuls into ice cube trays then freeze and use as required.

    Thank you, this was so easy to make. I followed the recipe exactly and next time will half sugar and salt. Mine turned out an orange colour so after reading comments, will only use a low speed to see if my next batch turns out red! Just have to find cheap tomatoes.

    This was so easy and tastes absolutely amazing! It took all my willpower to divide it into portions (I weighed out 50g into sandwich bags) and not just eat it all from the bowl. I used homegrown tomatoes and parsley. Thank you for this fantastic recipe!

    Update: I've been making this regularly, store bought just doesn't cut it in this household anymore! I've also been making the no sugar, reduced salt version on your website, and it is just as fabulous as the original!

    Cook it for longer, Ritchan, until it is the consistency you want it to be. Water content in tomatoes will vary throughout the year so your tomatoes must have just had a high water content tmrc_emoticons.)

    This is delicious. I used tinned tomatoes and froze it in ice cubes. It's so easy to just grab some whenever It's needed. I then used this tomato paste to make thermy pizza sauce.

    Have made 5 or 6 batches of paste using this method now. I only add oil and 10 g salt though, to keep things simple. A great way to process our glut of tomatoes from the garden this year! The freezer stash of paste will be useful for a long time.

    Can't believe I still haven't submitted a comment on this brilliant recipe especially given the many, many times I've made it. Brilliant work Bec! This is a brilliantly easy recipe and works well to freeze. So rich and tasty. I do dilute with canned tomatoes for pizza topping. We have an abundance of tomatoes in the garden so I'm stocking up my freezer drawers with paste

    Awesome - Perfect flavour. 

    This is my go-to recipe whenever I can access well priced tomato.  I sometimes cook longer until I reach the consistency I prefer, and reduce the salt and sugar to 10g each.  I made 5 batches over the weekend from a $5 box of tomatoes I purchased at the local farmers market.

    The colour can vary, and mine is somtimes more of an orangey red, but who cares - the flavour is awesome, and there are no additives!

    So easy and the results were great. I used 4 cans organic tinned tomatoes and added 10 minutes more.  I also used smoked himalayan salt. Got 4 small jars which would do 2 pizza bases or 1 pasta dish from each jar.  excellent tmrc_emoticons.)

    Fantastic recipe. I didn't add the sugar, bay leaves or parsley as the tomato paste I buy in the store is just tomatoes & salt. I 1/2'd the salt as per others recommendations. I'll freeze it in 75 g parcels as that's the amount of tomato paste I use when I make ketchup.  This tastes far better that anything I've ever bought. It is lighter in colour than the stuff that comes out of the tin but i'm not sure that it matters to me.
