      Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Recipe's preparation

    Spring Roll Pastry
  1. 1. Sift flour and salt together for 5 seconds, speed 5. Place in a separate bowl.

    2. Place butterfly whisk in position. Add in aqaufaba and whisk for 2 minutes, speed 3.5. Remove butterfly whisk.

    3. Add flour mixture back in, and gently add in water in on top.

    4. Place lid on, and knead on dough function for 2 minutes. If you need to add extra water to help bring it together, pour it in gradually through the lid, and keep any eye on it, to avoid too much water.

    5. Remove and form pastry into a ball, and place in a greased bowl, and cover with cling wrap, for 1 hour.

    6. On your silicone mat or a clean surface, sprinkle cornflour to avoid sticking, and knead to make sure pastry is elastic. Cut off portions with your spatula that you can handle to roll.

    7. Roll, using a rolling pin or pasta machine. I used my pasta machine, and rolled until on #5. Make sure you keep dusting the pastry to avoid any sticking. You may need more cornflour than is stated in the ingredients list - that's ok.

    To use: Use as you would normal spring roll pastry. This can also be used for potsticker dumplings, just cut it out in rounds.

    To store: Make sure the pastry has corn flour on both sides, and store with baking paper in between each sheet. Then you can freeze in a ziplock bag for up to 2 months.

Aquafaba is the fluid from a can of chickpeas. This makes it egg free. I got 2 lots of pastry out of one can, but it will vary from can to can. Just measure it out. The extra aqaufaba can be frozen if you would like to. Just defrost before you use.

You can roll it out to the thickness you would like it to be. I find my pasta machine to be the easiest to do it.
