Ingredients

Moroccan Lentil Soup

  • Small handful fresh coriander leaves
  • Few sprigs parsley
  • 1 carrot, chopped in thirds
  • 1 stick celery chopped in thirds
  • 200-250 g pumpkin, peeled and cubed
  • 1 large onion, peeled and halved
  • 2 cloves garlic
  • 3 cm piece fresh ginger, peeled
  • 1 whole chilli or 1/2 tsp dried chilli flakes
  • 20 g olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground paprika
  • 1 tsp ground cinnamon
  • 1 tbsp turmeric
  • Pinch saffron (optional)
  • 50 g tomato paste
  • 400 g tin tomatoes
  • 200 g red lentils, rinsed
  • 600 g chicken stock, or water and 1 tbsp TM stock
  • Sea salt and cracked black pepper to taste

Recipe's preparation

  1. Place coriander and parsley into TM bowl and chop for 3 seconds on speed 6. Set aside.
    Place carrot, celery, and pumpkin into TM bowl and chop for 4 seconds on speed 6. Set aside.
    Place
    onion, garlic, ginger and chilli into TM bowl and chop for 3 seconds on
    speed 6, add oil and all dry spices then sauté for 5 minutes at Varoma
    temperature on speed 2 with MC off. Add chopped vegetables, tomato paste,
    tomatoes, lentils and stock and cook for 35 minutes at 100°C on speed
    1.
    Add seasoning and chopped herbs, and purée for 5-6 seconds on speed 9 before serving.

    This was a big hit for my husband and myself - two young boys weren't as excited! I boiled some diced lamb and added half way into the last 20 mins of cooking and didn't puree. It had lovely texture and was very hearty and warming. Will be a regular.

    Absolutely spot on. Was hoping for left overs - not a chance. Everyone went back for seconds. Added lime and served with Greek yogurt. Fantastic. Smile

    Thankyou, lovely tasty recipe. Having made this previously I used less Turmeric than stated as I found it gives a sour, bitter edge to the soup. Also added a tablespoon of honey to balance the flavours.

    This is so delicious! I used a tin of lentils as I had no dried ones, used zucchini, baby spinach and pumpkin to bulk up the veg, left out the ginger as I dislike it and it a spicy, tasty recipe! 

    will definitely make this again over winter for quick lunches!!

    The first time I made this, I had a cold and just wanted anything that was warm and had veggies and wasn't something my husband had picked up from the shops. I had all the ingredients for this, so made it. It was just what I needed (although I couldn't taste it as my taste buds were wonky), and my husband loved it. I use this recipe fairly often now, and although it's often on the spur of the moment and I might be missing a veggie specified it's a good, flexible base. Thank you!

    Hi Angela,

    Unfortunately brown lentils require soaking overnight and take much longer to cook than red lentils, so we do not recommend a straight substitution.

    If you are intending to use brown lentils, we would recommend soaking them overnight and boiling them for 20 minutes and straining them before adding them to this recipe.

    Just made the lentil soup and its delicious-I just added a little extra water as it was a little thick in consistency and omitted the ginger as I'm not a big fan of it.  The whole family absolutely loved the soup including the kids. Definitely will do it again soon.  tmrc_emoticons.)

    Lovely mild flavour. Vert tasty soup and reasonably thick. Will be making again but will omit the tumeric I don;t think this is necessary. but thats just a personal preference, I served mine with a dash of cream and was just divine. Tasted even better the next day.
