Tasty Pumpkin Soup

Ingredients

Pumpkin Soup

  • 400 g Jap or Kent Pumpkin
  • 400 g butternut pumpkin
  • 1 onion, Brown
  • 2 cloves garlic, Paste
  • 1 level tbsp olive oil
  • 1 sachet Tomato paste (no added salt)
  • 30 g Butter
  • 600 g Vegetable or chicken stock
  • 125 ml light sour cream

  • Bread of choice to serve

Recipe's preparation

  1. Roghly dice pumpkin into small peices
    Chop onion in half then into quarters.
    Make garlic into a paste*
    Add onion, garlic and olive oil to tm bowel. Saute 5 mins, 100°c, speed 1.
    Add remaining ingredients to TM bowel.
    Cook 20 mins, 100°c, speed 2. (Or until pumpkin is tender.)
    Blend for 1 minute, speed 8. Increase speed gradually (careful it's hot!)
    Add sour cream. Blend 20 seconds, speed 4.
    Serve with bread. Enjoy!

Tip

*A grater plate or garlic card works brilliantly.

Taste will vary depending on pumkin and stock flavors used.
