Spicy bean soup

  • 2 level tbsp olive oil
  • 2 onions, Finely chopped
  • 450 grams carrots, Cubed 2cm
  • 2 level teaspoons fresh ginger, Grated
  • 1 tablespoon Korma paste
  • 0.2 litre coconut milk
  • 1 lime, Juiced
  • 0.4 litres cannellini bean, canned, Rinsed and drained

Recipe's preparation

  1. Place oil into bowl
  2. Add onion onion and cook cook for 3 mins @100
  3. Add carrots and ginger and cook for another one minute.
  4. Stir in curry paste and cook for 30s
  5. Add stock and cook for 15 mins
  6. Add coconut milk, lime juice and beans. Cook for 5 mins.
  7. Blend until smooth
