Almond and Chocolate Biscuits

  • 30 g macadamia oil, or grapeseed oil
  • 120 g Coconut sugar, or other sugar
  • 1 egg
  • 1/2 tsp bicarbonate of soda

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. If using block chocolate, break into chunks. Place 90g chocolate into the bowl and chop 10sec/speed 8. Transfer to a bowl and set aside.
  3. Place 200g almonds in the bowl and process 10sec/speed 9.
  4. Add 30g oil and mix 20sec/speed 9.
  5. Add 120g sugar, 1 egg, 1/2 tsp bicarb soda and 1/4 tsp salt and mix 10sec/speed 4.
  6. Return chocolate to the bowl and mix 10sec/speed 4.
  7. Roll into tablespoon sized balls and place onto baking tray. Bake for 12-15 minutes. cool and tray and store in an airtight container.

Tip

Sometimes I flatten the balls with a fork before baking.
12 minutes baking time gives a softy more fudgy biscuit while 15 minutes baking time gives a crunchier biscuit.
