  • 1 apple, quartered and cored
  • 85 g Butter
  • 25 g coconut oil
  • 120 g raw sugar
  • 3 eggs
  • 220 g natural yoghurt
  • 130 g plain flour
  • 120 g wholemeal flour
  • 1 pinch salt
  • 2 tablespoons baking powder
  • 1 tablespoon vanilla essence
  • 90 g blueberries

Recipe's preparation

  1. Preheat oven to 160 degrees fan forced. Grease and line loaf pan


  2. Chop apple - closed lid, turbo, twice for 1 second - set aside

     

  3. Add sugar, butter and coconut oil to the TM bowl - chop butter for 5 secs on speed 8 if not already softened. Combine for 1 minute on 37 degrees, soft spoon speed

     

  4. Add eggs and yogurt - combine on speed 4 for 5 secs

     

  5. Add flour, baking powder, salt and vanilla - mix speed 4 for 6 secs or until combined

     

  6. Add reserved apple and berries - mix speed 4 for 6 secs

     

  7. Bake for 1 hour or until a skewer comes out clean

    Great recipe, I used dried blueberries and made into mini loaves so only had to cook for 15 mins. Thanks for recipe  tmrc_emoticons.)

    yum and super moist. I used dried cranberries and a bit more apple, but it has turned out beautifully. I think it might be a typoe with the baking powder amount, 2 TBsp leaves a funny tate. I think next time I'd just put 2 tsp
