Ingredients

  • 2 eggs, large
  • 140 grams thickened cream
  • 100 grams caster sugar
  • 160 grams Self Raising Flour
  • 1 tsp vanilla extract

Recipe's preparation

  1.  

    Preheat oven 160degrees. Place 12 cupcake pattie cases on a baking tray or cupcake tin.

    Insert butterfly into TM. Crack 2 egss into bowl, add cream. Beat sp4 for 1 minute.

    Add vanilla, and caster sugar and beat on speed 4 for a further 2 minutes.

    Add flour and combine for 2-5 seconds on speed 3. You may need to scrape down side half way.

    Spoon into patty cases. Wizz butterfly at end to remove all batter.

     

    Bake for approx. 15 minutes.

    Cool and use the following icing (I used white chocolate)

    So incredibly easy.  This recipe also does 30 x mini cupcakes which is great for the class!
