Croatian Kifle ~ Shortcrust biscuits with jam

Ingredients

Shortcrust Dough

  • 250 grams unsalted butter, cold
  • 500 grams plain flour (preferably OO flour)
  • 100 grams plain flour (preferably OO flour), reserve to add to dough mix if needed
  • 1/2 Lemon Juiced
  • 100 grams sour cream or Greek yogurt, either works well
  • 2 eggs
  • 150 grams sugar
  • firm homemade jam, plum works very well
  • pinch of salt

Recipe's preparation

    Shortcrust biscuit pastry
  1. Preheat oven to 170oC

    Place flour, butter and salt in TM bolw mix for 10 secs speed 6 until mix resembles bread crumbs.

    2. Add all other ingredients, and mix 20 secs interval speed.  If you need to add more flour add until there is a nice smooth dough.  Tip onto bench and roll into a ball.  Refrigerate for 30 - 40 mins.

    3. Cut the large ball into smaller balls.  Roll out pastry about 25 mm thick and cut into squares 8cm x 8cm.  Place jam (1/3 teaspoon) onto corner.  Gather up that corner and roll towards opposite end.  Curve the dough a little to create a crescent shape.  Pinch the dough around the jam to avoid leaking during baking process. 

    Place crescents onto baking paper and bake for 25 mins at 170oC.

    While still warm roll biscuits in icing sugar.

    The sourness of the homemade jam compliments the crisp biscuit and sweetness of the icing sugar

    Yummy kifle. Thank you so much. I can now appreciate how much effort and love my mum used to put into these. We had some beautiful homemade hard plum jam which is perfect for Kifle. The pastry was a little soft so I ended up using flour for dusting and made many as pillows rather than the more fiddly kifle. Next time I will add an extra 50 g flour to the mixture.  Cooking 7 tmrc_emoticons.)
