Quinoa Christmas pudding with custard

Quinoa Christmas pudding

  • 2 oranges, zested and juiced, no white pith
  • 150 g pitted dates
  • 150 g pitted prunes
  • 150 g currants
  • 150 g sultanas
  • 1 tbsp brandy (optional)
  • 1 tsp ground cinnamon
  • 1 tsp mixed spice
  • Butter, for greasing
  • 50 g white quinoa
  • 700 g water, plus up to 6L for steaming
  • 150 g raw almonds
  • 60 g extra virgin olive oil
  • 3 eggs
  • icing sugar, to serve

Custard

  • 60 g raw sugar
  • 3 tsp cornflour
  • 2 eggs
  • 1 egg yolk
  • 500 g full cream milk

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Quinoa Christmas pudding
  1. Place orange zest into mixing bowl and mill 10 sec/speed 9. Scrape down sides of mixing bowl with spatula. Repeat milling 10 sec/speed 9, until a fine consistency is achieved. Scrape down sides of mixing bowl with spatula.

  2. Add dates and chop 5 sec/speed 6.

  3. Add prunes and chop 4 sec/speed 5. Scrape down sides of mixing bowl with spatula.

  4. Add currants, sultanas, brandy (optional), spices and orange juice and mix 4 sec/Counter-clockwise operation/speed 5, until combined. Transfer into a large bowl, cover and soak overnight at room temperature. Clean and dry mixing bowl.

  5. Grease a 1.25L (5 cup) pudding basin with butter and line base and sides with baking paper.

  6. Place quinoa and water into mixing bowl and cook 15 min/100°C/speed 2, until quinoa is tender. Transfer into simmering basket and set aside to drain. Rinse and dry mixing bowl.

  7. Place almonds into mixing bowl and mill 8 sec/speed 9.

  8. Add oil, eggs and drained quinoa and mix 10 sec/Counter-clockwise operation/speed 4. Transfer quinoa mixture into bowl with reserved soaked fruit and stir, using the spatula, until combined.

  9. Spoon pudding mixture into prepared basin, smooth the surface and secure lid. Alternatively, after smoothing the surface, top with a layer of baking paper and foil pleated down the centre. Secure with kitchen string. Place pudding basin into Varoma dish.

  10. Place 2L of water into mixing bowl, then place Varoma into position and steam 99 min/Varoma/speed 1. Check water level and top up to 2L, then steam a further 99 min/Varoma/speed 1. Check water level and top up to 2L, then steam a further 99 min/Varoma/speed 1. Check water level and top up to 1.5L, then steam a further 30 min/Varoma/speed 1. Remove pudding basin and stand for 10 minutes, then turn out onto serving plate. Rinse and dry mixing bowl. Allow mixing bowl to cool to room temperature before making custard.

  11. Custard
  12. Place sugar and cornflour into mixing bowl and mill 10 sec/speed 9. Scrape down sides of mixing bowl with spatula.

  13. Add all remaining ingredients and cook 7 min/80°C/speed 4.

     

  14. Dust pudding with icing sugar, and serve warm topped with custard.

Tip

· For a thinner custard, after cooking in Step 12, increase milk by 70-120 g and stir 20 sec/speed 3.

 

Variation

· Stove top variation: If you are cooking your Christmas feast in your Thermomix, you can steam this pudding on the stove top. After step 9, place an overturned heatproof saucer into the base of a large sauepan, and place pudding basin on top of saucer. Carefully pour boiling water halfway up the side of the basin. Cover and steam pudding over medium heat for 6 hours, refilling with boiling water as needed to maintain water level. Carefully remove basin from saucepan. Allow to stand for 10 minutes, then turn out onto serving plate. Proceed with Custard recipe.

 

· TM31 variation: in Step 10, place 2L of water into mixing bowl, place pudding basin into Varoma dish and place Varoma into position. Steam 60 min/Varoma/speed 1. Check water levels and top up to 2L. Repeat steaming and topping up of water level 4 more times (pudding steams for a total of 5 hours), then top up water level and steam for a further 30 min/Varoma/speed 1, until pudding is cooked through. Remove from water and stand for 10 minutes, then turn out onto a serving plate. Pudding steams for a total of 5 hours 30 minutes. Proceed with Custard recipe.

    Thank you Louise for sharing your recipe, everyone loves it at my home. I made a trial one last week and kept it in the fridge. It's almost all gone now so starting a second pudding today to take to our family Christmas lunch.  Only thing I altered was to add extra brandy and soaked the mixture for a few days in the fridge, stired it every day.

    My pudding bowl is a 2.2ltr so I just added another 1/3 of everything. I have been steaming it in my slow cooker for about 7.5 hours on high and I am not sure if it's cooked. Is it like a cake where it should come out with dryish crumbs only? The outsides seem quite firm however the centre seems to be a little too soft for my liking. How long should it take to cook a 2.2ltr pudding this way?

    My pudding steamer was a tad too big for the Varoma so I steamed my pudding overnight in my slow cooker.  Worked beautifully and I will definitely make this again in the future.  I think this would also be great as individual mini puddings, the flavours are very rich. A word of advice - if you like brandy then put more in, I couldn't taste it using only a tablespoon.  Otherwise, great recipe thanks!!!!

    Made this pudding yesterday.  Smells amazing!!  I would like to serve it on Christmas day, and have frozen it.  Will thaw it out the day before in the fridge, but for how long would I need to re-steam it for it to be hot in the centre?  Cheers Wally 1

    Place a good size piece of baking paper with foil of same size on top then pick the 2 pieces up together as if you were about to start making folds ( as in when you make a child's paper fan)...but just make one pleat or tuck then fold it down flat again....this lightly folds the two pieces of paper /foil together. Place over your bowl and tie with string firmly around the rim  to secure...the pleat bulges up if and when your pudding rises.

    We have allowed 30 hour cooking time which takes into account the soaking time of the fruit.

    This was amazing!! I have tm31 and did not change the recipe and it was perfect. I also just folded foil over the top of baking paper, using a Christmas pudding shaped bowl. 

    I soaked only one night in Orange juice, as per recipe. The whole thing was fantastic!!! I have never made a pudding before either, and no, I didn't need to top up the water much at all.

    The fruit should be soaked in the alcohol and orange juice. Usually when I make puddings I soak the fruit for up to a week in the alcohol and turn / stir the fruit each day. By this point there won't be too much liquid left over in the fruit that you will add to your mixture.

    Step 4 says to cover and soak the fruit mixture overnight. How much water do we pour over the mixture? Should it be room temp water or cold water? Then at step 8 it says to add quinoa mixture to reserved soaked fruit. Do  we discard the excess water we soaked it in over night?

    For those with a TM31, an alternative cooking method if your pudding bowl will not fit into the Varoma, is a slow cooker. I have cooked other Gluten Free Christmas puddings over night in the slow cooker. You dont have to top up the water, as the lid is on. They can be cooked ahead, stored in the fridge or freezer, then reheated on Christmas Day in the slow cooker again.
