STRAWBERRY ICE CREAM

Ingredients

  • 150 grams white sugar
  • 2 egg yolks
  • 500 grams full fat cream
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 200 grams strawberries, hulled

Recipe's preparation

  1. 1. Place sugar into mixing bowl and mill 2 sec/speed 9. Add egg yolks, cream, vanilla, and salt; cook 6 min/80 deg C/ speed 4. Pour anglaise mixture into container and allow to cool.

     

    2. Place strawberries into mixing bowl and blend 10 sec/speed 9.  Add anglaise to strawberries, mix together 5 sec/ speed 4. Pour into a container and freeze for at least 8 hours.

     

    3. Remove from freezer, cut into squares, place into mixing bowl and blend for 20 sec/speed 9, then 10 sec/speed 4. Place into an airtight container and freeze for at least 4 hours. ENJOY tmrc_emoticons.)

Tip

This is basically the vanilla ice cream recipe from the Everyday Cook Book with 200g of strawberries added.

 

If you don't want strawberry seeds in your ice cream you can put the pureed strawberries through a fine seive before adding the anglaise.

    So good, and so easy! I reduced the sugar to 100g and doubled the strawberries (we had been strawberry picking and had A LOT!). I also poured it straight into kids icecream/popsicle moulds, so skipped the re-freezing step. Turned out delicious - I've eaten at least as many of them as the kids 😝

    We made this yesterday and is amazing!!!!! We had freshly picked strawberries from the farm but we changed the recipe as we didn't have all the cream. Instead we did 300ml of cream and 200ml of coconut yoghurt and super delicious! Can't wait to try this with other fruits and berries.

    I don’t like ice cream, but this I’ll eat, and enjoy!

    Having recently discovered that I am lactose intolerant I used lactose free cream and my husband, who can tell immediately when I’ve accidentally used lactose free milk in his tea, did not even notice!

    6 Year old recipe, I’d say it’s been well and truly tested by now and is a winner.

    My family love this! I will reduce the sugar next time and add more strawberries (should have read the comments first). I had trouble blending the ice cream after the first freeze. I had to do it in two batches. Worked a treat with 0.50c per punnet strawberries, Thank You!

    Mulberry Icecream: Thank you for this recipe. I used it to make mulberry (instead of strawberry) icecream. I used 300gms of mulberries and 75grms sugar. The whole family loved it and I will be making plenty more, especially as our mulberry tree is yielding well this year.

    Absolutely Beautiful! A nice, smooth, creamy texture, with a strong strawberry flavour. We didn't strain the seeds but perhaps next time we will; they were a little chewy. Went brilliantly with a choc-honeycomb ice-cream we made a few days earlier.

    I've just made this for my husband. I reduced the sugar to 100 grs and next time I will reduce it to 75 grms, That said it tastes amazing, and my husband is a very happy boy. Our TM5 arrived yesterday and this is the first thng I've made, so thank you for the wonderful recipe.

    Oh yum. Cant believe I've had Thermie for over 3 years and have only just discovered this. Reduced sugar to 80g after reading some comments. Still sweet enough. Relativley easy to make. Found that using a metal spatula to remove the frozen squares made it easier than with plastic. Thanks for the recipe!
