Ingredients
0 portion(s)
- 6 eggs
- 2 egg yolks
- 110 grams sugar, (I use rapadura)
- 1/4 teaspoon fine sea salt
- 1 litre Milk
- 1 tablespoon vanilla extract
- 2 pinches ground nutmeg
- 2 pinches ground cinnamon
- 250 grams booze!, rum, bourbon, brandy... anything you like
- 120 grams cream
Recipe's preparation
Fit butterfly into TM bowl. Add eggs, egg yolks, sugar and salt to bowl and beat on speed 3 for 30 seconds or until blended and frothy.
Keeping the butterfly in place, add milk, vanilla, nutmeg and cinnamon. Beat again on speed 3 for about 20 seconds. Then cook for 10 minutes on 70 degrees, speed 3.
If drinking it hot, add alcohol and cream (if using). Mix for 30 seconds or so on speed 3. It should be nice and frothy by now! Serve and enjoy.
If drinking cold, cool the mixture in the fridge. Whip the cream in the TM until soft peaks form. Set aside. Without cleaning bowl and with butterfly still in place, return milk mixture to TM, add alcohol and blend for 30 seconds or so on speed 3. Fold in whipped cream and serve immediately

Tip
This delicious Christmas drink can be served all year round, as you can serve it hot in winter and cold in summer.
Adjust the spices to your own tastes. My "pinches" are quite generous.
Use whatever alcohol you like. I like half brandy, half cuban rum. It is quite a stong drink. Enjoy it responsibly.

Kids love it! I don't put alcohol in it obviously, just leave it out, I also halved the sugar amount. Also left out the cream on the times I didn't have it in the fridge and the kids keep asking for it of a night as "it's better than the one at the shop mum"

Heading out to a Christmas In July Party tonight & made this.
I absolutely LOVE this recipe, we used rum & only added in 110g. Its was absolutely delish, my husbands response when he tired this was "I LOVE THE THERMOMIX"!

I made this at Christmas and it knocked our socks off. The brandy was way too strong for us. The eggnog was a wonderful flavour. I made it again tonight with 100g of brandy and we really enjoyed it.

My hubby loves eggnog. Thanks so much for this recipe, it's earned me lots of brownie points!

We attended a Christmas in July dinner and this was a lovely way to start off the night. My husband said it was just like drinking custard, he was extremely happy. Having never tasted Eggnog I don't have anything to compare it to but everyone at the dinner enjoyed it and that's all that matters. Will make the cold version for Christmas.

Yum, yum, yum. Will now be a Christmas tradition in this house! (And next time I might be able to sneak some Brandy in there too!)

This was pretty nice! ive had some shockers in the past but this was good. I used morgans spiced rum and it was a good match (im not a bourbon fan) We had it warm but prefered it cold (although thats probably personal preference) i added only 80g of sugar and found it still very sweet so would maybe do a bit less next time.
thanks!
I made this as a
I made this as a non-alcoholic egg nog as I was more so making it for the kids. I followed the instructions but unfortunately I misread them and forgot to whip the eggs first. I also put in brown sugar as I didn't have rapadura. It was still beautiful! We had it hot, everyone loved it, grandparents down to the little ones. Can't wait to make it and actually WHIP the eggs first! lol - A lovely treat for a cold winter's night. I think it will taste really nice cold tomorrow on Boxing day. I'm sure I'd re-rate this as a 5 if I made it properly. I would probably just go white sugar next time as well.
