Ingredients

500 g

Bacon Jam

  • 250 grams smoked bacon
  • 250 grams shortcut bacon
  • 10 grams coconut oil, or oil substitute
  • 4 cloves of garlic peeled
  • 1 Brown Onion Halved
  • 3 tablespoons Coconut sugar, can substitute with brown sugar
  • 1/2 small Chilli with or without seeds
  • 250 grams coffee, brewed
  • 60 grams Apple Cider Vinigar, can use white wine or white balsamic
  • 60 grams Pure Maple Syrup
  • salt and pepper to taste
  • extra water

Recipe's preparation

  1. Cut bacon into 1 inch strips

    Chop onion, chilli and garlic in TM Bowl 5sec*speed 4

    Scrape down sides add bacon and oil 5min*varoma*speed 1

    Add rest of ingredients except for water 60min*100*speed 1

    Check every 20-30 min or so and if it needs it add a 1/2 MC of water

    When that 60min is up continue cooking for 60min*100*speed 1 adding no more than 1/2 MC of water if it needs it every 20-30 min or so

    When time is up you should be left with a sticky jam like sauce season with salt and pepper and then Closed lid turbo a few times till you get a desired texture

Tip

Spread on toast and serve under eggs topped with avocado for breakfast

Eat straight away on fresh bread

Put on sandwiches for a picnic

Will last up tp 2 weeks in the fridge (if it can last that long)

    Very nice..... this is the exact same recipe from "Not Quite Nigella" that I used to use in my pre thermy days..... lovely to see it converted making it so so much easier and quicker to create.

    I just recently made the Thermofun recipe which while nice, was overly sweet - this recipe (with so much less sugar) provides the perfect balance of sweet and savoury and is just right.

    I didn't need as much cooking time as stated - I also used the turbo function a few times to chop my bacon (I was lazy and pressed for time pre xmas, lol!). I added half a teaspoon of chipotle chilli powder instead of the chilli and next time I may add a pinch of cinnamon just to make it extra fancy Wink

    I also used all shortcut bacon as I'd been told that if using a fattier bacon, it can separate into layers once cooled in the jars. This recipe got me two small to medium sized jars (they were probably around 200ml I'd say).

    Thanks for converting and sharing! Hopefully the family will enjoy this as a xmas gift.....

  • Epic FAIL! I read the 250g of

    Epic FAIL!

    I read the 250g of brewed coffee has coffee grounds that had already been brewed. Got 200g from my local coffee shop and put that it. 

    Might try and use the remaining bacon I have and cook for 60 without coffee and then use some of the bacon from this fail and see if I can save.

    such a waste of time and money!

    Great Xmas gift for all my carnivore friends. I doubled the quantity which made three jars. I don't know if I should have doubled the quantity of liquid as after cooking for the stated time there was still a lots of liquid. I just transferred it to a frying pan and reduced the liquid on the stove top. Great flavour though.  Could have lessened the salt a touch.
